Pescatarian/veggie one-pot dinners?

I've got a newborn, 3yo and a DH with restricted diet (pescatarian, can't eat anything in the onion family except small amounts of garlic, & minimal legumes).

I'm looking for your best one-pot/tray dinners. We have been eating pasta bakes, orzo or paella type dishes on repeat for the last couple of weeks so hoping there are some other suggestions Grin

Roast sliced potatoes and other vegetables in a shallow roasting pan or tray and lay fillets of fish on top towards the end of cooking.

Get a big roasting pan and put olive oil in. Put some fresh gnocchi in one side of it (I buy the stuff in the fridge that says to pan fry it). On the other side, put chunks of pepper, mushrooms, courgette. Sprinkle oregano and black pepper. On top of the vege, put a whole slab of feta. Drizzle honey over and sprinkle with some chilli flakes and dried thyme. Roast it. Mix it all together when roasted.

I do it as two sides like this so that the gnocchi gets nice and crispy and brown.

Any recipe wher you replace the meat element with either fish/prawns or cheese?

Leave out the onion and garlic

So potatoes, rice, bulgur, couscous, bread as the carb base if he cant do beans or chickpeas or things

Can you use nuts butters in sauces for flavour and protein?

Mexican, Italian, Chinese, Indian, use the spices to chuck over veg and protein and stick it on a tray and roast it.

Probably - I’ve never used that, but worth a shot? Or you could boil it whilst you roast the other stuff, although obviously not as lazy then!

Seeing as you’re the one presumably with the newborn and DH is the one with the restrictions I’d say this is very much his job at this point…. Can you get him to use ChatGPT to thrash out some options??

Hmm presumably they’re both coping with a newborn and toddler and are trying to work things out together, since the OP hasn’t said that her DP is lazy and awkward? We don’t always have to assume the worst!

microwave a flat bread for 30 seconds
spread with humous
add roasted veg and cubed, fried halloumi,
add seads and pomegranate seeds
drizzle with honey

Aha! I thought it was a new thing I'd never heard of. Your process is much the same as mine and varies according to the actual vegetables I have on the day.

We've got into a rut, but it's a healthy one. We take a wide variety of veg. Some is steamed and some roasted. Then we pair it with a sauce and that's dinner. With a tomato based sauce everything gets mixed together with some kind of bean/legume, cheese on top, baked, eaten on its own. A cheese sauce might be paired with pasta or garlic bread. A curry gets paired with naan or rice. A Mexican one, also rice. The odd one out is the stir fry as it's not actually fried except for a quick flash to mix together the seasoning, and noodles.

We're vegetarian, I like tofu, DH doesn't, so I often have this. Would be so easy to add steamed or baked fish to any of these.

I dont really think thats a rut, I think we should have different expectations about how 'different' and 'wow' and amazing dinners should be every night.

Veg with a protein with some flavours is absolutely right, its not 5 star dining of Heston creativity because its not meant to be.

I like an easy Aubergine Parmigiana- make a tomato base in the bottom of the dish, I use a tin of finely chopped good quality tomatoes, spices (paprika), onions (could omit), garlic and a bit of chilli. Cut aubergine in half lengthways, keeping the end on. Then slice lengthways about 1cm across - hard to describe, but basically create an aubergine fan! Lay that on top of the tomato base, cover with mozzarella, veggie Parmesan and bread crumbs. Takes about 20 mins ish in the oven.

Gousto was my saviour for getting me out of a rut as the only veggie in the house. Taught me loads of tricks, so I no longer use gousto but am able to use the recipes it gave me - including the aubergine one

I was about to say this too.

This is lovely, you can replace the leeks with red peppers. Sweet potato works well instead of the squash too. I use some milk in the sauce and don't bother frying the parsley.

@namechanged3210 another really nice one is to make a frying pan Yorkshire pudding with chives and put smoked salmon, cream fresh, capers and samphire on it. Take 15 minutes.

I’ve got this book but must admit that I don’t love it because it’s so reliant on tomatoes.

I love the gado gado though!

Is it all members of the allium family he can't eat? Leeks, chives, spring onions, eschallots?

-Shakshouka without onions. I normally add a tin of chickpeas, but that might be too much legume for him.

This sounds lovely, I'd never have thought to put gnocchi in the oven. I wonder if I could swap the feta for mozzarella or something else milder... we love feta but DS (3y) isn't a fan yet
