Pescatarian/veggie one-pot dinners?

I've got a newborn, 3yo and a DH with restricted diet (pescatarian, can't eat anything in the onion family except small amounts of garlic, & minimal legumes).

I'm looking for your best one-pot/tray dinners. We have been eating pasta bakes, orzo or paella type dishes on repeat for the last couple of weeks so hoping there are some other suggestions Grin

DD is a week old 😧Congrats- I had no idea you were only 1 week post partum, OP. If you were my friend, relative or neighbour I'd be bringing you some meals! The meals you've been eating thus far are amazing then!

At this stage, I'd be getting DH to cook some basics:
-Fish fingers or frozen crumbed/battered fish and chips that can be shoved in the oven. Mushy peas, frozen peas or a salad
-Baked potatoes. Cheese, beans, tuna/mayonnaise, coleslaw
-Omelette with whatever fillings everyone can eat

I assume your DH has IBS/stoma/Gerd or some other digestive issue? Is this a new issue for him? What foods has he eaten till now? Has he looked up recipes specific to his condition or low FODMAP recipes?

Thank you. We've had some freezer dinners & you've reminded me I have a loaf of potatoes in the cupboard for jackets. No one has brought us any food so far, but my mum is bringing lunch (& cake!) tomorrow.

DH was told it was IBS for the last decade but when he had appendicitis recently they said the scans also showed he had diverticulitis.
He's always had some food sensitivities (& has asthma and eczema too) but about a decade ago he had a big flare up at which point we cut out red meat and cow's milk; other flares have lead to more foods being excluded (asparagus was a particularly bad one). After a bunch of tests & an ultrasound didn't find anything else, IBS was diagnosed. I heard about FODMAPs and we've aimed for a low(ish) FODMAP diet since, gradually working out what one's definitely affect him and what ones he can manage in lower quantities.

Thought of this thread tonight

Sliced up a fennel bulb, couple of onions, pepper (leave the onions out and use other pepper or some cauliflower/carrot/courtgette perhaps?), air fried it with a handful of spices just out of a bbq mix jar, waited until they look charred and crispy, plenty of oil, dry them out, dont want soggy veg, then chuck on frozen prawns, around 3 more mins, there abouts

Served with salad. You could serve with bread, potatoes, rice whatever you fancy.

With such a little one you should be taking every short cut in the book. My favourite gift for new parents is a COOK voucher - maybe see if you could do a big order for the freezer even if its just meals for the tolddler
