I'm so bored with the way I cook salmon. Generally this is pan fried or roasted in a parcel of baking parchment. It could have parma ham wrapped round it or homemade teryaki sauce, served with things like samphire, roasted cherry tomatoes, tenderstem broccoli, new potatoes, sometimes with brown rice or noodles or I make a poke bowl type thing.

Just been googling @ Good Food for inspiration because we are all so bored with it. Some of the recipes for salmony pasta look lovely but have circa 1000 cals per portion which I cannot reconcile with.

Does anyone do anything healthy and fabulous with salmon? I am on the verge of giving up on it. Maybe we just need to eat it less than once a week.

We usually roast with something on top. Either miso paste or sometimes a mix of yoghurt and spices. Other times just chili flakes and pepper.

You’ve already tried the obvious ones!

How about fish cakes? Can make them herby or Thai style.

Or mackerel instead? Still oily fish but different.

I don't like mackerel much - it is in my 'fishy' fish category. The only time I eat mackerel is on holiday, coastal, outside and warm with a glass of wine in my hand!

Also, sorry, I cba with making fishcakes after work.

I generally marinade salmon in an asia type dressing (soy sauce, honey, garlic, ginger, lime juice) and often serve with an asian inspired coleslaw in the warmer months or hot veg in winter. https://www.recipetineats.com/asian-slaw/

There are salmon pasta bakes which don't use cream. There are lots of other oily fish too- trout, sardines, anchovies. If they are too 'fishy' they mellow when cooked such as in pasta con le sarde, puttanesca etc.

Marinate in 2:1 teriyaki/sweet chilli sauce, rind and juice of a lime. Pan fry as you stir fry whatever veg with a bit of soy sauce and water, keep warm whilst you reduce sauce a bit. Serve salmon on bed of veg with sauce over. Easy peasy. Rice or noodles if you want.

Throwing a spanner in here, sea farmed salmon is very destructive to the environment. I personally would not touch it. And no, I am not ultra green, just a leisure angler.

Coastal fish farming is wiping out wild salmon and sea trout.

But fear not. Landlocked farms are about. So can I urge salmon eaters to shop ethically, and buy from landlocked farm producers :-)

I like it in Chinese stir fry. Fry, steam or microwave the fish first, flake it, stir fry the veg, and add the fish with whatever sauce (I like hoisin or teriyaki). Lovely.
Agree about the wild salmon and farmed, I only get the wild. The conditions farmed fish are kept in are disgraceful and cruel.

🧄🫚🌶Get 2-3 tablespoons of natural yoghurt.
Grate fresh ginger and garlic, paprika, turmaric, garamasala, squeeze lemon, salt and pepper, fresh corriander. Marinate salmon into for at least 4 hours.

Bake in oven serve with chopped cucumber, tomatoes and onions and bombay potatoes. 😋

Salmon stands up well to strong flavours so I often tandoori or cajun it. Then serve with a veggie curry or veggie cajun sauce and rice.

Fab done with those spices on the BBQ too.

My favourite is just olive oil and Cajun seasoning and cook in the air fryer so it gets nice and crispy. Roasted vegetables in the other side of the air fryer and then serve with couscous and a drizzle of sweet chilli sauce.

Thank you, I don't like cajun seasoning. DS hates couscous so I rarely cook it.

I did make Anjum Anand's indian salmon tacos recently, I'd forgotten about those.

I generally love Ottelenghi recipes though, so hopeful (also reminded me about the puttanesca style baked salmon recipe of his I used to make that I'd forgotten about).

Harissa salmon (for 2) - mix some harissa and Greek yogurt and coat 2 pieces of salmon, put on a tray. Toss a tin of butter beans with a teaspoon or two of olive oil and spread those around the fish. If you want add cherry tomatoes and/or chopped red pepper. Bake for 20-25 mins at 200 C
Serve with some green veg eg tenderstem brocolli.
