I'm so bored with the way I cook salmon. Generally this is pan fried or roasted in a parcel of baking parchment. It could have parma ham wrapped round it or homemade teryaki sauce, served with things like samphire, roasted cherry tomatoes, tenderstem broccoli, new potatoes, sometimes with brown rice or noodles or I make a poke bowl type thing.

Just been googling @ Good Food for inspiration because we are all so bored with it. Some of the recipes for salmony pasta look lovely but have circa 1000 cals per portion which I cannot reconcile with.

Does anyone do anything healthy and fabulous with salmon? I am on the verge of giving up on it. Maybe we just need to eat it less than once a week.

Mix up breadcrumbs, grated parmesan and a sprinkle of lemon zest. Mix in a good dollop of pesto and press down the topping on to the salmon (IMO works best with a big bit rather than individual fillets). Bake on medium heat. The topping should be crunchy but the salmon stays very moist.

I'm also completely addicted to this soup, which is very filling and feels very nourishing. You do have to have fresh dill for it though, and plenty of it! cookingtheglobe.com/finnish-salmon-soup-lohikeitto/

I would love the soup @SqueakyDinosaur - actually ate it in Finland last year but haven't thought of making it.

Depending on what it is you don’t like about Cajun spices are there alternatives you could try? I regularly do a recipe for salmon with Cajun spice & honey, but use Mexican seasoning because I have a big tub of it. Boursin and pasta is also a hit here as is salmon spread with Boursin with breadcrumbs on top then baked.

Thanks, I'm not bothered about trying to replace cajun spices, I don't like particularly spicy food and am not a huge fan of paprika, especially smoked paprika. But that is ok because there are so many things I do like.

I try to eat fairly clean and don't really use much dairy, so things like boursin are not really on my radar.

Things I do like tend to be simple, made from scratch on the day but not too long a cook time and not too complicated after work. An example of the sort of food I love - tonight's dinner - is this.

If you don’t do dairy fair enough, but for others it might be worth pointing out that original Boursin is UPF free so there is nothing unclean about it. Grin

Very healthy:
paper parcel with wafer thin slices of fennel, lemon, spring onion on top.

Or in a foil parcel with shaved fresh ginger, fresh chilli slices, soy sauce and a sprinkling of sesame. Right at the end, open the parcel and stick under the grill for a moment to let the sesame seeds toast (don't use paper. It sets alight. How do I know this? Grin)

Poached with a sauce of finely chopped dill, lemon zest and garlic stirred into Skyr or Quark or similar naturally low fat creamy dairy cheese

Home made tapenade of black lives in brine not oil, a couple of sun dried tomatoes, fresh garlic cloves and some mediterranean herbs. Blitz together, spread over the salmon and bake. You can add a sprinkling of wholemeal breadcrumbs towards the end for a crunchy topping if you like.

Poached and broken into pieces, stirred into pasta with a low fat creamy sauce made from quark and beaten egg with a little dried garlic granules, lemon zest and smoky paprika, which you stir through the pasta for a couple of minutes to cook the egg, then add fresh chopped dill (or parsley if you don't like dill) fresh steamed petits pois, and the salmon.
