Have a Nigella banana bread in the oven right now.
Morocco what did you bake your LDC in? I've done it as muffins and loaftin before, was wondering about a traybake that can be sliced into individual portions?

I think it's so fab you can do it any which way you like and it's always lush.
I usually do loaftins but you can also slice them up and sell individually. prob better bet tbh cos they cost a fortune to make these days and it's easier to get a bit of cash off lots of people than get someone to pay a decent amount for one whole cake iyswim (guess that is why you're thinkig 'individual portions already)

I sometimes do a Marmalade & Sultana loaf cake. Really moist and tangy - let me know if recipe required.

just chuck them all in the trays and fire them into the fridge, job done

the cupcakes using yogurt are SOOOOOO easy too and make loads - very light and moist and dd1 (4yrs) 'helps' and they still turn out well

if you want more 'cake' like receipes I can give you a few but the ones I already posted are the easiest and will probably give you the best return - never met anyone who can turn down a traybake

MARMALADE & SULTANA LOAF

200g sultanas
7 tbsn marmalade
150ml hot tea
125g soft butter
125g golden caster sugar
2 large eggs
200g plain flour
1 1/2 tsp baking powder

Put sultanas in bowl, add 3 tbsn marmalade and cover with the hot tea. Leave for 30 mins (or more).
Mix butter, sugar, eggs, flour, baking powder and pinch of salt together, Sir in soaked fruit mixture (I only add a small amout of the liquid as first time I made it, it didn't set properly). Pour into 2lb loaf tin.
Bake at 180 (160fan), gas 4 for 40-45 mins.

For icing - mix the rest of the marmalade with 5 tbsn icing sugar and 2 teaspoons lemon juice.

This really is nice and tangy.

chocolate covered fairy cakes - easy peasy

4oz butter
4oz sugar
4oz sr flour
2 eggs
1/2 tsp baking powder

cook cakes then melt 250g of decent chocolate (milk for me) then pour over and decorate with whatever crap you have and put in fridge for a while so the chocolate can harden.

This is so easy and delish!

Primary Choice Sponge
Serves 4

Sponge
115g (4oz) Butter or margarine
115g (4oz) Caster sugar
2 Eggs
225g (8oz) Plain wholewheat flour*
15g (½ oz) Baking powder
85ml (3fl oz) Milk

Topping
85g (3oz) Butter or margarine
85g (3oz) Golden syrup
175g (6oz) Icing sugar
1 tablespoon Drinking chocolate

Preheat the oven to 180ºC/350ºF/Gas 4.

To make the sponge, cream the butter or margarine and sugar together in a bowl. Beat the eggs, and then beat them into the creamed mixture. Sift the flour and baking powder together then add gradually to the creamed mixture. Add sufficient milk to give a soft consistency.

Put into a greased 20cm (8?) square cake tin and bake in the preheated oven until springy to the touch, about 30-35 minutes.

For the topping, melt the butter or margarine and the syrup together in a pan. Sift in the icing sugar and drinking chocolate, and beat until smooth. Spread on to the cake, and leave to set.

  • the original recipe ? from The Dinner Lady by Jeanette Orrey ? states plain flour, I used Waitrose Wholewheat Flour and it was lovely!

Nigella's Fresh Gingerbread with Lemon Icing is just gorgeous. I tend to double the quantity of icing, though, as the original recipe seems a bit sparse to me.
