I always default to cottage pie because it's filling, easy to make and everyone likes it.

I make a lot of pies. Usually batches of individual pies. Chicken and leek, minced beef and onion, steak and mushrooms, chilli beef and cheese, chicken and gammon…they’re so handy to have in the freezer and can be done with mash or chips and veg. I have a houseful of people who have different dietary requirements and work different hours, so freezing homemade stuff in individual quantities means we aren’t falling back on crappy bought foods too much.

I also make pasties/slices/cakes/flapjacks a lot. DS2 often needs to grab something calorific in the small hours when he gets home from work, and my dad is underweight so I’m constantly plying him with stuff.

I make industrial quantities of soup, which I have for dinner most days. I currently have over 100 portions of soup frozen, in about 8 different varieties.

Roast dinner because it’s the only meal I can guarantee myself, each child and DH will actually all sit down together and finish. That and hunters chicken

Pork belly in a slow cooker on a base of ratatouille (with red wine). Get a lean pork belly and it comes out tasty pulled pork, no waste. Easy and cooks while I'm at work. Ensures we eat different vegetables such as aubergine & courgette. Rice day one and leftovers on jacket potato usually.

Does ratatouille go in the slow cooker raw then pork on top?

A big veggie chilli full of different beans. It's easy to make, full of flavour and guarantees really good variety of veg to contribute to the weekly plant count. If I have it with with a homemade guacamole, I can tick off 15 plants from the 30 plants a week target in one meal

Roast chicken. It’s just me and DD, and it will genuinely feed us for half the week. Won’t always have a roast dinner, sometimes we’ll have it with Greek salad and flatbreads, others with coleslaw andjavket
spuds. Next day I’ll strip it down and make sandwiches, pasta and/or curry,
and stock with the carcass.

That’s mine too.
I break it into lettuce, air fryer bacon and grated cheese and call it Caesar salad. Have it for lunch everyday.
I pull off other bits and add to coriander garlic, chilli, ginger and coconut milk blitzed for Thai curry.
Fry up with packet rice and peas.

I don’t cook much with more than 3 extra ingredients as it all gets too expensive and I’m thinking about food all the day.

Chicken thighs in a tray roast. A particular favourite is with peppers, mushrooms, cherry tomatoes and tiny potatoes- with lots of smoky paprika.

I came here to say this. My kids love it and makes tasty leftovers for lunch.

we also love salt and pepper chicken and noodles, chicken curry, prawn stir fry, chicken fajitas and bacon, soft cheese and veg pasta

Fridays are 'Pizza Night' so that's probably our most regular meal. We make them so we can each choose our own toppings. I make garlic dough knots or garlic bread too. Then we have salad and coleslaw with them. A cheap meal but always goes down well.
We like chicken pesto pasta, roast, risotto, curry, spaghetti bol so they're on a more frequent rotation than other meals too.

Mushroom and chorizo risotto because I can make it in my Thermomix so easily and leftovers make great arancini balls. Prior to the Thermomix risotto always took 2-3 times as long as the recipe said and you had to stand over it stirring.

My main go tos are salmon poke bowl (rice, salmon, edamame beans, broccoli, carrots and avocado with rice vinegar, sesame oil and soy sauce), jacket potato with cheese and beans, tuna pasta bake or salad, chicken risotto in the slow cooker (with onion, carrots and peas), chicken noodle soup (with celery, leek, onion and carrots) and veggie spag bol with quorn mince with frozen mixed veg, onions and chopped tomatoes. Soy honey garlic chicken and pork loin with a similar sauce are great options for something a bit more interesting.

I have a son with ASD so have to be very consistent with foods and introduce new foods slowly. I want to do cottage pie but he has an issue with mash potato if it’s too creamy so I don’t want to risk it. Rice, pasta, noodles and baking potatoes are less risky with taste and texture. Always welcome to suggestions of meals to try. Also, son will take a dislike to onions if too big, tomatoes if whole or uncooked, avocados if sliced a certain way, so it’s not always smooth sailing. Also have to avoid strong flavours.

Yes..... cut the bacon into bits and fry off in a pot, rurn down the heat to low/medium, add the philadelphia and bag of spinach, it will wilt down within 10 mins, add cooked pasta, stir and enjoy.

@Amsylou - is your son ok with other forms of cooked potato? I sometimes top a cottage pie with slices of tinned potato (seem to hold their shape better although if I don't have any I might steam some new potato in the microwave and slice and use that instead).

Also - how do you do a risotto in a slow cooker?

@yeesh do you use curry recipes or just cook from memory/instinct? I'm always on the lookout for good curry making advice/recipes if you have any to share 😄

I’m not a recipe cook, I like to have a big stock of herbs, spices, coconut milk, tinned tomatoes etc and then I decide what curry to make depending on what needs to be used up. Cooked chicken I usually shred and do a Thai curry or if I have beef then I’ll do a slow cooked Indian curry. Or if I have lots of veg I might do a veg curry or a potato one.
