I always default to cottage pie because it's filling, easy to make and everyone likes it.

Roast chicken (I get a huge one) which we either have as a proper roast dinner, with jackets/ chips and salad, or a quick roast (no roasties, no cauli cheese) just mash and basic veg. We do this frequently and turn the leftovers into at least one more meal - it was a MN hack to get the biggest chicken you can, can’t remember why!

For me it's roast chicken dinner. buy the large one even though only two of us. buy ready made stuffing (it tastes fab) do eveything spuds carrots broccoli gravey too. but I put enough on for two of us foe two nights of dinner. enough for sandwiches too. Next eve then it's great just plate up microwave done

Pasta bake not always the same one but we have a pasta bake at least twice a week.

Spag Bol or chilli con carne, as it’s easy, tasty and I add loads of veg to it. Any leftover spag is made into chilli and leftover chilli is eaten the next day in a wrap or on a baked potato.

Spag Bol because it’s my sons favourite, I make a huge batch to freeze and I can use it in lasagne, closely followed by roast chicken the leftovers of which becomes a pie, fricasse or cobbler type thing. Both are economical, provide more than one meal and will definitely be eaten. Bonus points for being good ways of getting vegetables into kids.

@yeesh do you use curry recipes or just cook from memory/instinct? I'm always on the lookout for good curry making advice/recipes if you have any to share 😄

Fish baked with butter in a parchment bag. Stir fried greens - more or less any green veg.

Salmon on Mediterranean vegetables tray bake. It’s a Tom Kerridge recipe. Simple to make, very healthy & everyone in the family likes it. I’ve also cooked chicken thighs on the vegetables & it worked well too.

Spag bol, chilli, lasagne all fairly often too. Haven't actually made a cottage pie in ages!

Cottage pie, bangers & mash, pasta bake.
DD doesn’t like rice, DH not so keen on pasta so mainly potato based meals for our carbs and I work around whatever meat/ veg was on offer.

Noodles. Either ramen or just in a sauce. Will always change the toppings depending on what protein and veggies we have in.
Recently we've been doing the brothy rice dishes that are all over social media nearly every week too, but switching the recipes depending on what we fancy.

Sausage stew - sausages cut in half, plus fried onions, carrots, two tins of tomorrows and one ton of haricot beans all chucked in a casserole dish with a mug of stock and cooked for 40 mins. Serve with rice/grains/potatoes. Even my little nieces love it.

That sounds lovely but a ton of beans sounds a lot. And if I can’t get hold of any
tomorrows can I substitute for a tin of yesterdays? 😁

Pork belly in a slow cooker on a base of ratatouille (with red wine). Get a lean pork belly and it comes out tasty pulled pork, no waste. Easy and cooks while I'm at work. Ensures we eat different vegetables such as aubergine & courgette. Rice day one and leftovers on jacket potato usually.

How do you stop the ratatouille going to mush in the slow cooker?

Roast chicken as it makes 3 meals.
Stir fry as well (not with leftover chicken).
Fresh fried makerel fillets with rice stuffed peppers.

Yes, when DH retired early he took over day to day cooking. I still bake bread, scones, biscuits and cakes etc. and the occasional roast on a Sunday.

Chicken thighs in a tray roast. A particular favourite is with peppers, mushrooms, cherry tomatoes and tiny potatoes- with lots of smoky paprika.
