I want to expand my soup repertoire in 2026. I'm very much a throw whatever veg I have in and blitz type of soup cook. It works, and I always have some in the freezer but I'm looking to advance on that.

What are your favourite soup recipes?

I make a lot of soups that are not blended, since my stick blender died a year ago and I haven't got round to replacing yet:

  • Roberto (https://www.newyorker.com/culture/kitchen-notes/the-many-lives-of-roberto-a-soup)
  • Italian wedding soup - mini meatballs, pasta and greens in a chicken broth (no tomatoes) - stick in a parmesan rind to the broth and it enriches the soup wonderfully
  • Spiced butter bean soup with feta, avocado and tortilla chips - basically a fennel and tomato based broth with a can of butter beans, and then the toppings to taste
  • Smoked haddock chowder
  • Corn chowder
  • Chicken noodle soup with lots of dill

Also, I have a wonderful cookbook called Soup, Broth, Bread by Rachel Allen and it's helped expand my soup repertoire. I got it for 99p on Kindle!

2 bags of frozen butternut squash, a tin of tomatoes, a tin of water, veg stock, boil and blend. Add thai red curry paste and/or red pepper if you wish.

My favourite is leek, mushroom, potato and cashew. Not blended so more like a stew. All the brown/red things (balsamic, miso paste, worcester sauce, wine, tom paste, mustard whatever you have) in at the beginning for extra flavour. I'm a (bad worcester sauce eating) veggie so am always trying to get protein in things.

Oooh, I make lots of soups. At home and for work.

I separate in to easy-soups and faff-soups 😆
There is always lefts over cooked veg in the freezer, and I chop and bag any and all scraps - think broc and cauliflower stalks, celery ends/frods etc - these usually get used for easy blended soups when there's enough of any one thing.

Always use decent quality stock cubes, game changer. No more bland soups!

I LOVE my nutri bullet for making soups extra smooth. But also for chopping soffrito veg super quick and easy, and even from frozen if small enough portions.

Carrot soup is notoriously watery/bland. You have to cook almost a puree carrot then add (good quality stock) to thin down.

My fave easy soup is lentils and bacon. We cook a gammon ham in the slow cooker covered with water (you can add stock veg if you like but we don't as this is tasty enough without) when the gammon iss cooked, take out and chuck in half a bag of lentils and cook for another hour our so. Top with bits of crispy bacon. That's it, it's bloody lovely, this one NEVER has left overs 😆
French Onion is also super easy and satisfying.

Fave Faff-Soups, not necessarily complicated, just take a bit of planning...
Anything where I re-roast a carcass to shred and make stock - worth it for Asian soups and chicken noodle etc
Roasted pepper if a faff but loooverly.
Real proper tomato soup with real proper tomatoes!!! - mega faff but you only need Tom's, onion, butter and water and tastes like heaven 😋

My go to soups are carrot and coriander, lentil(with or without ham/ bacon),leek and potato, roasted red pepper and tomato, or pea and mint.

Spiced carrot soup

I found a jar of massaman curry paste in the cupboard and I used it to make a vat of the most delicious carrot soup.

1 or 2 onions diced - I used frozen
two teaspoons of Thai Gold Massaman curry paste
1.8kg carrots - I didn’t even peel them, just lobbed off the tops
1 chicken stock pot
water to cover the carrots
1 tin coconut milk.

blitz once the carrots are cooked and add water if you like it thinner.

I cannot get over how nice it is.

@Troubledwords this is a good recipe: https://www.recipetineats.com/corn-chowder-with-bacon/. Sometimes when I don't want it to be quite so rich I leave out the cream, and just mash up a couple of the potatoes against the side of the pot with the back of a wooden spoon to make it thicker.

Tuscan bean - white beans, Italian sausage, tin of tomatoes, onion, garlic, stock and cavolo Nero

Quick pea - saute a shallot, add frozen peas and edamame beans if you have them. Maybe a chilli or some chilli flakes. Cook in chicken or veg stock for 5- 10 mins. Half blitz with a stick blender so you have some whole peas and others are blended. Top with extra virgin olive oil and any chopped fresh herbs you have to hand. Mint and basil are particularly good.

DH does a lovely smoked haddock chowder/Cullen skink.

My favouritess at the moment are turkish lentil soup with lots of cumin, coriander and lemon perfect on a cold and a vegan courgette and garlic soup which is lovely.

I have a bit of a soup collection going in my freezer. I tend to make a batch and freeze at least 3 portions.

Oh my new favourite is cauliflower cheese soup!

1 cauliflower, 2 carrots, an onion, a potato, some chopped up cheddar, splash of milk or cream, veg stock, paprika… it’s fabulous!

I make soup 2 - 3 times a week in winter.
Yesterday I made Em the nutritionists high protein Minestrone with pickled chillis & lots of parmesan from her Instagram account. A few days ago I made Nisha Katona's tomato soup with Nigella seeds & a tin of white beans blended in to thicken up the soup.
Chinese chicken & sweetcorn is on regular rotation here too. As is beef ghoulash soup. Another really lovely one is Melissa Helmsley Filipino Rice & garlic soup that she often reposts on Instagram.I use coconut oil in it & it gives it a really lovely taste.

A really lovely warming winter one is spicy red lentil and rice. I’ve adapted it slightly from the original.

Serves 4 as a light meal, 2 as a main, with some left over.
2 chicken or veg stock cubes
1.75 litres boiling water
100 g risotto rice
200g red lentils
2 tsp ground coriander
1 tsp ground cumin
1/2 tsp black pepper
2 tbsp oil
Juice of one lemon

Dissolve stock cubes in the water, add rice, lentils and spices. Bring to boil, then simmer for 35-45 mins until lentils have dissolved and the rice is very tender,
Meanwhile, halve and finely slice the onions, slice finely and fry in the oil
over a very low heat with a cover on the pan, for about 30 mins until very soft. Then increase the heat and fry, stirring, until very brown, caramelised and almost burnt. Drain on kitchen paper.

Stir into the soup, with the lemon juice.
Good with warm naan bread, but toast will do,

Any leftover goes thick, like dal, and is very good warmed up for lunch the next day.

Sadly I've never been able to make a good carrot and coriander soup, maybe this is the year that changes.

Do you have a recipe for the brie and courgettes one?

Jason Stead's courgette and brie soup

450g courgettes sliced
2 medium potatoes about 350g peeled and chopped
1 onion finely chopped
1.2litres vegetable stock
225g brie remove the end rind and cut into pieces
Salt and pepper

Put all the ingredients except the brie in a large saucepan. Cover, bring to the boil and simmer gently for 15 mins until the vegetables are tender. Stir in the cheese. Cool a little then purée. Rast for seasoning

Carrot and coriander soup
25g Butter
1 medium onion finely chopped
one garlic clove crushed
550 grams of carrots of which 450 grams roughly chopped and 110 grams coarsely grated
one litre of vegetable stock
1 tablespoon of chopped fresh coriander
150 mils single cream
salt and freshly ground black pepper

Melt the butter and cook the onion and garlic gently until soft in a covered saucepan without coloring add the roughly chopped carrots and stock
cover, bring to the boil and simmer gently until the vegetables are tender.
cool a little, then puree
stir in the grated carrots, coriander and cream taste for seasoning

I often use half the amount of cream and more coriander

I’ve just done quite a good one today. Stuck a gammon joint in the slow cooker with a bag of frozen soffrito (diced carrot, onion and celery) some black pepper, 200g of split peas and about a pint of water. Cooked for 7 hours on low. Broke up the gammon with a spoon! added a handful or so of frozen normal peas then blitzed. The kids loved it which is a very rare occurrence! Really easy do to as well.
