What to do with twelfty gazillion courgettes?

I know about ratatwee, ministrone, tomato and courgette pasta sauce, fried courgettes in garlic butter

Is there a good way to freeze 'em? Whenever I freeze portions of minestrone, the courgettes come out horribly rubbery when defrosted.

Is there such a thing as courgette chutney?

All ideas welcome, I'm getting about six a day off my plants now and am a bit dazed. Ta.

do in ribbons with veg peeler and add raw to salad

you can make chutney out of anything - have a Google - but I've never tried it.

I would make chutney with them, I don't have a particular recipe but a quick google I'm sure would sort that.
They make delicious fries when tossed in seasoned flour and deep fried. Good stuffed and baked too.

'Ratatouille'?

How about soup? Cook several courgettes + two broccolis + 1 carrotte + 1 onion with a bit of butter. Add salt and a cube of sugar while cooking. Blend & add water. Voila!

There is a Turkish dish that is done primarily with courgettes - Slightly cook 1 onion, add 2 tomatoes. While they are cooking, chop & add 1 carrotte, several courgettes (round, about 2 cm thick), and just a little bit of rice (maybe 1-2 tablespoons). Close the top, bring to boil, stir, then turn heat down. Ready to eat in about an hour, but best when at room temperature or even cold.

Fantastic Jamie Oliver smashed cougrgette paste!

Fry 2 crushed garlic cloves and 1-2 small dried red chillies (or fresh I guess) in some olive oil for a couple of minutes.

Add 6-8 small courgettes, unevenly sliced, stir to coat and put lid on.

Turn heat down then shake and stir every 5 mins for about 35 mins making sure they don't catch on bottom of pan.

When they are nice and soft with some chunky bits and some really pulpy bits remove from heat and season to taste. Can add more chilli if you like it hot!

Then pour in some more olive oil to loosen it all. Finally add a handful of chopped fresh mint and juice of a lemon.

We serve as a dip with toasted pitta and it keeps in a jar in the fridge for a good few days.

This Farro salad is really nice;

400g farro or bulgar wheat
4 courgettes, cut into chunks
1 fennel - thickly sliced
1 red onion, into wedges
2 red peppers, cut into chunks
1 aubergine - cut into chunks
4 cloves of garlic

Soak the farro/bulgar wheat in cold water for 20mins
Lay the veg onto baking trays - drizzle some olive oil on them and roast for about 30mins.
Let the veg cool and sprinkle some white vinegar on the veg, then add a good bunch of fresh chopped herbs such as basil and oregano.
Simmer the farro/bulgar wheat for about 20mins, drain well.
Put a good squeeze of lemon juice on the farro, season with pepper then mix in the veg.

you must have been quicker off the mark sowing your courgette seeds...
we have 4 plants, no courgettes yet, only just put them outside in big pots.
am watching this thread with interest in case we end up in a similar position!

little tiny courgettes are nice raw-you can make a lovely chopped salad with courgettes, avocado, radishes and tomatoes all chopped small in a good garlicky vinaigrette, good with grilled meat fish or anything really....

i do a lovely courgette and gruyere puff pastry thing from the good housekeeping cook book. i can post the recipe if you want it.
also have recipe for cocoa courgette muffins which can be frozen.

yes you can make courgette chutney.

Also, courgette cake or cupcakes, just like carrot cake.

You can slice them up raw and freeze them on trays, when they are frozen bag them up, ready to use when you need them in cooking

I'd say you can't freeze them. I did read somewhere that you should blanche them before freezing, but it didn't work for me.
Roasted courgettes are lovely - just cut them in large chunks and roast in a hot oven for 30-40 minutes until slightly charred.

Alternatively, set up a stall in the Tesco car park. They had run out of loose courgettes the other day and wanted £1.99 for three in a pack .

You can freeze them, either raw or blanched for 30 seconds and then plunged in ice cold water.

Courgette soup

2 large courgettes, chopped
1 medium to large onion, chopped
Large knob of butter
Good glug of olive oil
½ litre of vegetable stock
Handful of basil (optional)
Salt and pepper

Fry the onions and courgettes in the oil and butter for a few minutes. Add salt and pepper and continue sweating until the courgettes and onion are softened.

Add the stock. Bring to the boil, then cover and simmer for 20 minutes.

Blend in the basil and serve.

Sliced, olive oil and on barbecue, or also on kebab skewers with halloumi and peppers. Grated, then fried in butter with mushrooms and spinach - add to pasta and pesto. Also works peeled into ribbons.
Long chunks - add to veggie chilli and serve in tortillas.

we freeze spare ones, just slice into chunks and put on a baking sheet for initial freezing then tip them into a freezerbag.
Once defrosted they are best for things like ratatouille as they do go a bit soggy, that said we freeze spare toms for mid winter fresh ratatouille - delicious

grate them and stir fry with chopped onion & garlic & rosemary. fold in beaten eggs to make an egg frittata

Cut in chunks, steam and dress with olive oil/lemon juice & rind & thyme to make a warm salad.

Another nice warm salad version is to dress with olive oil/lemon juice/garlic & cumin

"Au gratin" with nutmeg white sauce and cheese topping

philadelphia courgette soup always a favorite with children

Japanese style salad : very thinly sliced(with peeler) and tossed with sesame oil/vinegar/soy sauce dressing
