What to do with twelfty gazillion courgettes?

I know about ratatwee, ministrone, tomato and courgette pasta sauce, fried courgettes in garlic butter

Is there a good way to freeze 'em? Whenever I freeze portions of minestrone, the courgettes come out horribly rubbery when defrosted.

Is there such a thing as courgette chutney?

All ideas welcome, I'm getting about six a day off my plants now and am a bit dazed. Ta.

Courgette Loaf (sorry, it's an American one so it's all in cups):

3 eggs
1 cup oil
2 cups grated courgette
1/4 tsp baking powder
1 cup chopped walnuts
2 1/2 cups sugar
3 tsp vanilla essence
3 cups plain flour
1 tsp salt
2 tsp cinnamon

  • beat eggs, sugar, oil & vanilla until thick
  • fold in courgette
  • sift flour, baking powder, salt, bicarb & cinnamon and fold in
  • fold in walnuts
  • bake at 180c for 1 hour

Yumm either by itself or with butter. Freezes well once cooked.

jamie stuffed the FLOWERS of them with feta and herbs and deep fried them! (was in the jamie at home series)

Has anyone said griddle them, PW? On a proper cast-iron griddle if you have one? Totally changes the flavour.
Then you can have them with a tiny bit of chopped mint, chopped red chilli, squeeze of lemon and drizzle olive oil on those.. those.. those griddled bread thingies that the River Cafe woman are alwasy banging on about. What are they called, dammit? Bruschetta.

I always grate courgettes then blanch for freezing. They are then perfect for a couple of tbsps of courgette over pasta or in mashed potato or a filling for an omelette or savoury pancake or whatever.

Definitely try tempura,if you have a dryer fryer of some sort. Delish :-)

I don't know if it's your thing... but if you cut them into very fine julienne you can do them like spaghetti? Heat some crushed garlic in olive oil,then turn up the heat and add the strips of courgette and fry for a bit, to get a bit of colour on them. Salt and pepper and lemon juice/chilli/flaked salmon/combo in and then serve hot. For more sustenance, mix it with cooked tagliatelle or spaghetti. So so pretty Smile
The best way to do the 'julienning' is to use a peeler to get ribbons, then cut in to thinner lengths a bit like the size of parpadelle or taglitelle.

Also soup! Garlic, onion, butter, courgette slices, brown a bit then add veg stock. You could blitz it or have it as a broth.

I love the idea of a courgette cake but have never got round to doing one!

Pickle them - lovely in a ham sarnie or burger bun.

Chutney.

Courgette and feta/Parmesan muffins with raisins are v yummy (easy to make and can be frozen). H F_W recipe.

Courgette fritters.

If you want some with kids' names on for Halloween it will soon be time to prick out their names on a courgette or squash/pumpkin and let them grow on to marrow size.

I see a glut in my veg plot anytime soon.

Kolokithokeftedes are amazing when they're all hot and crispy. Not a diet food! Basically courgette bhajis (without the spices).

I made Nigella's courgette cake and it's really good. Much like carrot cake, but pleasingly green!
