'Sandwiches for dinner'

Is anyone up for contributing to a thread about 'sandwiches' for evening meal/dinner?

Am not meaning 'can't be bothered with cooking so I'll have a tuna mayo sandwich' but more food which is essentially a take on a 'sandwich' but is hearty enough to have for evening meal.

We - which is just Dh and I as DD is old enough to have moved out - are quite partial to an occassional sandwich dinner (obviously this may not be suitable for those who are feeding multiples...!)

On our current list of foods that fall into the 'sandwiches for dinner' category are:

Báhn mi - with pork belly, often adapt Ottolenghi's recipe

Torta - mexican sandwich - I use Thomasina Miers take

Nigella's garlic portobelloe mushroom on ciabatta

Olia Hercules cotoletta

Am wanting to make a Portuguese bifana (send suggestions please!)

Will make arayes this week I think - have some recipes but again do share any gems.

Never made arepas but up for that too!

What 'sandwiches' am i missing out on (have not included quesadillas as I think of them as a lunch rather than dinner..no logic I know..)

Ds and I have just had chicken shawarma and salad in a homemade flatbread (Jamie Oliver’s recipe - 100g self raising flour and 4 tablespooons of Greek yoghurt). It was lovely. Would have been nice with tzatziki but we just had mayo and peri peri sauce.

@Mauvehoodie I love shawarma and make it a lot but for some indefinable reason I've not included it in my sandwich category! - my thinking is disturbingly inconsistent!!

We quite often have: fajitas - chicken, steak or prawn, some sort of kofta and salad in a flat bread or pitta (beef mince with a bit of feta and chilli is good), duck and hoisin pancakes, croque monsieur, steak sandwich, different sorts of home made burgers and slaws, halloumi wraps, brisket pulled out and mixed with bbq sauce, lamb shoulder with mint and pomegranate, pulled pork etc

  • Souvlaki chicken with tzatziki in Greek flatbread
  • pork carnitas made into a burrito with red rice (rice cooked with salsa and red kidney beans)
  • simple steak, onions and mustard in a baguette
  • falafel, hummus, cucumber and salad in pitta

Some of your ideas sound lovely.

Oh and my fave, chicken escalope with a slice of cheese grilled on top in soft white bread with mayo and a squeeze of lemon!

I could live off sandwiches, BLT, chicken salad, Brie and bacon baguette, roast beef, mustard mayo and salad on a baguette. DH was working very late tonight and I was hungry so just had pate on bread. I made him something a little more substantial. The only sandwich I really will not eat is Cheddar/Lancashire/Edam on it's own or with anything.

birria = tacos soup ,mix in a green salad or eat with a spoon
if i could afford it iwouldeat it 3-4 times a week

We love leftover roast chicken/pork and stuffing with gravy/apple sauce with gravy for dunking.

Ciabatta with the bottom spread with sour cream and the top spread with guacamole filled with leftover chilli con carne/fajita mix.

Chilli cheese steak- slow cook a pack of diced beef in stock with mustard, garlic and black pepper. Fry mushroom with butter, peppers and jalapenos, coriander,garlic and crème fraiche. Combine the beef and mushroom mixtures.

Meatball subs.

My favourite, grinder sandwiches!

Sloppy Joe's

Cajun chicken Caesar.

My other favourite. Tandoori chicken/chicken tikka/kofta/onion bhaji kachumber salad, mango chutney, raita, crushed mini poppadoms and chilli sauce. Preferably in a Dina Paninette wrap hut any bread works!

A BLT will always be elite.

I had this at a Waitrose cafe recently and want it again, keep thinking about it!… Toasted sourdough, smashed avocado spread over, with slices of grilled honey halloumi on top served with a rocket salad.

And a more basic kid’s favourite - fish finger sandwiches, with iceberg lettuce, sliced tomato and mayo on cheap white bread or wraps. Or use chicken gougons with a sweet chilli or Caesar sauce instead.

Rye bread, toasted with:

  • pastrami, Emmental, mustard, pickles
  • bacon, avocado, spinach
  • iceberg, chorizo, mayo, Red Leicester
  • roast beef and horseradish

Flatbread with:

  • halloumi, tzatziki, honey, red onion
  • pulled pork, balsamic, green olives
  • chicken, rocket, tomatoes, feta, relish
  • boiled eggs, mango chutney, red chillies and natural yogurt

After reading this before bed and dreaming of sandwiches I have a few more suggestions. Cubanos, Reuben, Keema pav, Katsu sando, Bifana (I love this with chimichurri), Roujiamo (I like to use lamb for these)

Chicken, pork and/or mushroom souvlaki in pitta always goes down very well. I add onions and peppers on the skewers as well.

I've also done chicken escalope in ciabatta with salad, mayo and tomato chutney. That was really good!

Tip For Welsh rarebit: I always add a dash of Worcestershire sauce.

I love a quick mackeral pate sandwich with some leaves (cooked mackeral fillets, cottage cheese, horseradish, black pepper, lemon juice, dill) - you don’t need a recipe just whizz it up in a blender and adjust.

Leave it a day for flavours to emerge (you can also freeze it in portions very successfully).

Love a good Croque!

I often do cheese toasties in the air fryer which are amazing.

Quesadillas are a great option because you can use pretty much anything leftover in it.

Tacos and fajitas are kind of sandwiches, our fave is steak fajitas.

Fish finger butties with a good dollop of tartare sauce (or Danish remoulade) is a regular here.

I like to make a pan bagnat in the summer. Sloppy joes are usually eaten in a bun.

If you go to football matches in Spain, a lot of people bring filled baguettes at half time (been to some matches where the sound of foil being unwrapped is deafening). A popular filling is Spanish omelette (tortilla) but could be Spanish cheeses, jamon, salsiccia etc.

Simple soups with toast are something we go for a lot in winter.

Red lentil and root veg. Red lentils, carrots, ginger and coconut milk.

Potato, onion, broccoli, boiled in stock and cream added at the end.

All done in about 30 minutes. Just chuck in a saucepan and blitz at the end.

We are very partial to a very good fish sandwich, often will batter our own fish and have in a brioche bun with tartare sauce and lettuce and a side of chips.
