Millions and millions of apples

What do I do?? Cooking apples mostly. The wind last night has brought a lot down and so I'm not sure how well they will store. This year's crop is bumper too.

Usually I do crumbles until it's coming out of everyone's ears. Or just stew them for breakfast but I don't think it's going to cut it this time. I like cooking so would love any recipe ideas!

I've now made several large Devonshire applecakes (recipe from Mumsnet), some apple flapjack (Tate and Lyle recipe found online) and cooked apples to freeze for crumbles etc. We're also eating with yoghurt in the morning. The Redlove apples are so pretty. Still got a huge bag to work through.

Hello apple fans, I have just thought of another way of using a billion apples - can't believe I forgot it before. Mincemeat, as in the mince pie kind. The recipe I use isn't anything special, but I usually vary it depending what I've got to hand anyway - usually double up the apples, whatever dried fruit and nuts there happen to be in the cupboard. The nicest batch I ever made was when I was using up everything left in the cupboard before we moved house - no idea what the magic ingredient was. 🙄
Anyone got any mincemeat recipes they particularly like?
