Hi all
I've started a new job.
we have a training day coming up and i’ve just been told that we all bring a dish for lunch.
I pulled ‘main’ out of the hat. Other categories were salad/sides, bread/cheese, sweet.

Two others pulled out main and one was veggie. Although I can choose anything. Luckily other then x2 vegetarian’s we have no other dietary requirements.
Will chat to the other ‘main’ people but looking for ideas.

Our boss brings in hummus, guacamole, & crudities etc that his wife makes, along with olives & dipping crisps/pita bread.

Any ideas for something tasty & easy to serve.

I think quiches would be a good shout - you could make 2 or 3 different types.

I'd go for Lorraine, Four cheese & chive and Mediterranean vegetable 🙂

I was going to say quiche too , it will go with the crudités and dips better than a hot dish.

Quiche is a good idea! My mum used to make mini quiches for buffets when I was little.

you could do a cold meat platter or similar based on the other categories

most other things will risk veering into cheese or salad territory unless you can reliably go for a hot option

Quiche is my go to for this sort of thing, I have two large quiche tins so usually make a leek and chorizo one then a goats cheese and red pepper. Simple and quick if like me you cheat - ready rolled pastry, ready grated cheese, roasted peppers, chorizo is ready to use anyway so it’s just sauté leeks as prep, assemble and cook

If you are going to do quiches etc then one flavour which I really like is a Tart London recipe in their A Love of Eating book. Tomato Tart with harrissa. And you use an oat base rather than pastry. It's delicious and a bit different.

You could even buy a couple of nice quiches from the ‘cook’ shop ! Expensive but delicious and easy

I absolutely hate this sort of thing. Feels like a lot of pressure. Both to make interesting dishes compatible for a break room at work, and to eat whatever randomness other people have made. Probably on a paper plate.

Quiche sounds like a good idea. One simple / safe and the other a little more flavoursome.

Parboil chunks of pumpkin. When cooled a bit, slice.
Using a jar of thinned down Italian tomato sauce, layer the pumpkin and tomato like lasagna.
Top with cheese and breadcrumbs. 180 degrees until golden.
Add crumbled Greek feta into the layers for a hit of salt if you would like. Or bacon if not doing vegetarian.

Easy, filling, forgiving. Freezes well.

I would ask what’s been popular in the past, or make a shortlist and ask people to vote, or ask the other people doing mains.

If it’s something to go alongside salads and dips I’d go for something that works for a cold buffet, since it is summer. Quiche is good or perhaps you could cook a gammon or some chicken breasts and serve sliced on a platter.

Homemade food brought to a second location is my bete noire.

Having said that, I’d buy two cheap lasagnas, push them sideways a bit and cook them. Bingo - “homemade lasagne”

How a about a Spanish Tortilla? There's a really nice one you can do in the oven (tortilla al horno) its easy to make, transports well and it's delicious cold.
