Vegetarian roast dinner advice please

Advise please. I'm having my son's new girlfriend round for dinner on Sunday. She's a vegetarian. I was going to do a roast beef before I invited her. Now I think cook that for everyone else and add a nut roast for my son's gf? And vegetables etc? She likes a nut roast she says. I asked her. Thanks all. I have literally never cooked a vegetarian roast dinner before

I’d be happy with everything apart from the meat. I’ve never had a nut toast, we usually do veggie sausage 🙈 random I know lol. Sometimes a quorn pie, but that’s a BIG dinner!

Hi Op 👋 it’s quite hard to track down a Nut Roast outside of Christmas (annoyingly) but as a PP said they have lovely individual pies and tarts in Lidl in the freezer

snd sainsburys also have a large vegan/vegetarian range frozen

M & S have a banging nut roast that's well worthy of the calories in it. And Waitrose sell these which taste amazing: www.clivespies.com/pies/nut-roast/ It's my go to for a roast dinner, and others will also enjoy a spoon of it as a kind of stuffing. But I'm equally happy with all the veggies and trimmings especially if there is cauliflower cheese involved.

When my daughter became a vegetarian, I switched to using ghee and rapeseed oil (I use cold pressed) for my roast potatoes and they are so good I have never switched back to dripping when she's not eating with us.

She used to love the Sainsbury's nut cutlets and they were so convenient, it's such a shame they stopped doing them.

We usually do a veggie pie now, or some Cauldron sausages, though I have also done a square of puff pastry topped with onion marmalade and a good slice of goats' cheese.

To make a quick nut roast/loaf I use a ‘fancy’ stuffing mix and toast some mixed nuts chop them and mix with the stuffing
sainsburys chestnut hazelnut and thyme stuffing is perfect for this.

@DilkushaKitchen i miss those too, we’re they in a twin pack if I remember

What other things were you planning to do with the roast beef OP?

I'm guessing brocolli, carrots, peas etc, roast potatoes (in goose fat?), yorkshires?

It would be nice to do some of the potatoes in olive oil but you don't have to, get some vegetable bisto (just make it with hot water), do you make yorkshires from scratch? I think frozen ones are vegetarian

I really like a cauliflower and brocolli cheese bake, I have big wedges of pepper in there too.

It might be hard to find a nut roast at this time of year, what supermarket do you like? You could look online and send her some options? (Maybe via your son)

She may just be being polite.. not all vegetarians like nut roasts! I definitely wouldn’t give her a shop bought processed ready meal. You could marinate some firm tofu and make a lovely salad for her with hallumi, rocket, pistachio nuts etc? Takes less than 10 mins.

If you need a really easy option, you could always pick up some veggie sausages or a Linda McCartney type pie thing from the freezer section, they tend to go fine with usual veg and potatoes.

That's a rubbish option though if it's a roast dinner for everybody else. It's easy enough to replace meat and have all the usual roast dinner trimmings

I'm veggie and love a roast dinner. Roast veggies (potatoes, carrots, parsnips) broccli / greens, Yorkshire puddings and bisto gravy. I wouldn't even bother with the nut roast but if she likes it then you could.

One of my DC is veggie, so all sides are veggie, and I’ll do a little jug of veggie gravy and a cauliflower cheese. At Christmas I make a nut roast, and for general roast dinners pick up something ready made (but not fake meat).

I love a Linda McCartney pie. I wouldn't be happy with a salad in place of a roast either - I love salad but I'd rather join in with what everyone else is having.

This! Isn't do a good roast alternative.

I wouldn't be happy to be served just vegetables.
Don't forget the stuffing and bistro gravy!

I hate when you go out somewhere and everyone else gets a roast and all the sides, and you get risotto or a bad curry.

Most vegetarians are fussy about which fake meat/tofu they like, if any, so I wouldn't pick that for someone else, or at least give her options.

I love faux meat. To be fair i do like nut roasts too. Just rarely see anything featuring them nowadays.
Ah, I see what you mean about old fashioned.
They seem.to appear in quite a few of my recent cook books and on my instagram reels at the moment. Maybe they are about to have a revival!

been veggie 20 years and my best roasts are just the veggies, potatoes, yorkshires and I always make stuffing as my 'meat' or some Linda McCartney veggie sausages (freezer section - great to have in if she come over for dinner again). Just make sure you have some veggie gravy (most bistros, granules are but double check) and be careful if you cook potatoes in goose fat etc.

Especially if I had to sit at the table while everyone else tucked in.

As a vegetarian I would be gutted to be served a tofu salad when everyone else is having a roast dinner

If she says she likes nut roasts just bung one in the oven and give her the leftovers (or have in sandwiches if you like it)

Alternative easy homemade option would be a big field mushroom in pastry with some sort of cheese. Would be blue for me but know not every 17 year old likes it! BBC good food had an excellent recipe but think now it’s behind a paywall.
