ok, what do i do with salmon??

i don't really like fish but we need to start eating it (other than tuna from a can) so i bought 2 small salmon fillets. What do i di now?! There are cooking instructions on the back and a friend suggested iput a dollop of mayonaisse(sp?) with chopped basil in it on the plate. What do i have it with?

poach them or steam them and serve with fresh, steamed vegetables (I add a dollop of butter to the veg, but if you're all out for healthiness, this might not be the best idea)

Salmon has a really delicate flavour so you don't want to overwhelm it with anything too strong. A little smidgeon of mayonnaise with basil sounds nice. Perhaps some fresh, cool salad to go with that?

You can also do pasta with a touch of cream (or creme freche or whatever floats your boat to get it moist and tasty) with the salmon just flaked and folded in.

you could try grilling it until almost done (turn over), and then smear with pesto from a jar on top , and then layer of grated parmesan under the grill again. it delish.

or fry in butter. then take out when done add two tablespoons of capers to the butter in the pan (may need a bit more) and add one tablespoon white wine vinegar. fry for about a min. pour this sauce ovber salmon serve with new pots and salad. yum. think thats a nigel slater recipe. dead easy. could use low fat spread if on a diet.

I do lots of fish littlelapin's way. Always yummy and very easy. Highly recommended.

I bake it. Sprinkle some salt and pepper on them and put it in the oven at 350 degrees (am in US) for 30 minutes. Don't worry about cutting off any skin because when you take it off the pan the skin falls right off.

It's so good and simple.

i don't like parmesan so that one\is out. dp would go for that tho.

I normally sprinkle with chopped basil, cover with halved cherry tomatoes and then mozzarella cheese then bake in the oven- lovely! Not my recipe but Jamie Oliver's although he does this with cod.

I like salmon poached rather than oven-cooked .. it's totally different taste IMO

I put it in a deep frying pan, cover with water, add a few black peppercorns and some quarters of lemon, bring to boil and simmer for 20 mins

and eat with salad and new pots.

an alternative is to take the poached salmon, flake it and mix it with some cooked (big pieces) pasta, tub plain greek yogurt, chopped chives (a lot), season and put it in the fridge to cool / set .. that's delish for summer

I find oven-cooked salmon is a little oily but poached is pink and fluffy

I make fishcakes with it. Do potatoes in the microwave, and a sweet potato (especially if for the kids)...and most importantly Old Bay Seasoning -- easier if you're in the US, but so nice with fish...then make them into little cakes and coat in breadcrumbs then you can freeze them like that, and cook them from frozen in the oven like fishfingers...

do u have any filo pastry? we have it frozen in sheets so dead handy

2 sheets of pastry approx 12 x 18cm. fold one in half, brush with melted butter. place salmon fillet in centre. Cover fillet in cream cheese mixed with green pesto and then layer with chopped mushrooms, fold pastry over and bake for 20 mins at gas mark 5. Serve with mixed salad and some beetroot - YUMMY!

I like to roast my salmon. Rub some olive oil onto the top of the steak or fillet, then some honey and grain mustard, then a reasonable layer of crushed black peppercorns. Roast in a hot oven for about 10 minutes. Delicious with new potatoes, or cold with salad

gosh, what alot of things you can do with salmon!! Not feeling 100% so am going to have it 2mo with a nice crunchy salad instead

green stuff its basil, parmesan, garlic isn't it? DH makes his own, cannot remember the exact ingredients though
