How about some breakfast ideas that are quick enough but filling? Or can do day before if easier. Before school type?

Maybe not toooo many fruit as we already eat a lot in the day.

Hi,
Some suggestions for quick and filling breakfasts - sorry, some of them with fruit / berries…

Yoghurt and granola (high in protein and fiber) - add honey / fruit / berries / nuts or seeds for extra flavour

Whole grain toast with peanut butter and sliced banana
Egg wrap - scrambled eggs, add cheese / spinach and wrap in a tortilla wrap

Smoothie - Blend banana, oats, yoghurt and milk for a quick-on-the-go meal

Boiled eggs and avocado on toast - you can pre-boil the eggs to save time in the morning

If you like avocado on toast - try smashed pea (flavour with salt, pepper, mint, lemon and top with some chilli flakes) served with a fried egg on toast!

Cottage cheese with toasted seeds

Make- ahead breakfasts
Overnight oats (mix oats, milk / yoghurt and add fruit / berries / dried berries / grated apple / nuts / seeds / peanut butter / apple & cinnamon... in a jar and leave in fridge overnight - ready in the morning!

Breakfast muffins (last 5 days in the fridge or freeze)
Make banana oat muffins or egg-muffins with spinach & cheese (reheat quickly in an air fryer or oven for a warm delicious breakfast)

Whole-wheat pancakes. Make a large batch and freeze. Toast in the morning!

Boiled eggs - quick on the go! Lasts 5 days in the fridge.

@Pickandmixusername do you have any favorite starch (pasta / rice / potatoes / cous cous...)? Do you eat meat? Any veggies you like / dislike? Are you ok with dairy (cream / cheese...)?

I'm sure we can come up with something foolproof, quick and tasty with minimal effort!

200g porridge oats
2 ripe bananas
2 eggs
2 tsp seeds (optional)
2 pitted dates (optional)
1 tsp baking powder
50-100ml milk
Top with nuts / berries/sliced dates / greek yoghurt or maple syrup.
Line 12 holes of a muffin tin with cupcake cases. Put the oats, bananas, eggs, seeds, dates, baking powder and 50ml of the milk into a blender / or use hand mixer and blitz to make a batter.
Pour evenly into the muffin tin.

Bake for 15-20 mins / 200 degrees, until well risen and lightly golden. Let them cool a bit before eating!

Google “breakfast muffins” and you will find lots of great, easy and delicious recipes!

Can you give me an easy high veg recipe and method for a risotto? We had a ready meal version recently which everyone liked and DH is coeliac so would suit him.

Risotto:

Heat oil and add finely chopped onion and cook until soft and translucent (about 3 minutes), without browning.
Add the rice and toast with the onions until golden (this will give the rice a nuttier flavour).
Gradually add white wine and stock (warm stock works best).
Wait until almost all the liquid is absorbed before adding the next ladle. Repeat this for about 18–20 minutes, until the rice is tender but still has a slight bite (al dente).
Remove from heat and stir in the butter and Parmesan cheese for a velvety finish.
Season with salt and black pepper to taste.

One of my favourite veg risottos is with peas (add just before adding the cheese, from frozen) - you can add some fresh mint and or pesto.

Other veggie options:
Wild / mixed mushrooms - adding a deep, earthy, and umami-rich flavour. I would roast the mushrooms in the oven with a smash of soy Sayce before adding to the risotto.

Roasted butternut squash (half blended into the risotto, half as chunks)

Spinach and lemon - A light, fresh, and zesty risotto

Tomato & Basil Risotto, top with mozzarella balls and olive oil (Italian Summer in a Bowl). Roast the tomatoes ahead for a more intense flavour.

Asparagus & lemon - slice up the asparagus and add at the end only for a few minutes (to keep some bite)

You can look up ratios and recipes online. Jamie Oliver usually have some simple and easy to follow ones.

Hi,
Here are a few low carb ideas (will have a think about some more)

Whole or half roasted cauliflower. Marinate the cauliflower with some herb oil / BBQ chilli rub / garlic & lemon… and roast in the oven. Serve with a cooling yoghurt dip.

Courgette noodles with pesto (if you have a spiralizer)
Courgettes, pesto (home made or shop bought), olive oil, a squeeze of lemon, roasted cherry tomatoes with some mixed herbs and top off with some grated Parmesan.

Avocado & egg salad - smashed avocado, boiled chopped eggs, Geek yoghurt or mayonnaise, salt, pepper and a squeeze of lemon. For more flavour use coriander, chives, chilli or red pepper flakes and cumin in your avocado smash.

Cauliflower stir-fry
Cauliflower rice (grated cauliflower), mixed veggies, soy sauce, olive oil - add in an egg for protein! Add some chilli flakes / red pepper flakes, salt, pepper and maybe a smokey spice mix (Cajun / Fajita..)

Halloumi and courgette skewers - Halloumi, courgette (cut I nto cubes), olive oil, lemon squeeze, oregano, black pepper, salt. Skewer and fry in a pan (brushing with the oil and seasonings) for about 5 minutes / side

I use this risotto recipe for ease - it’s oven baked so super easy. Can easily be tweaked and leftovers are lovely too so you can make extra for lunch / later.
