Hi,
What about:

Smashed avocado + toasted seeds, fresh coriander, cumin & lemon juice

Hummus, sliced cucumber and smoked paprika - top with crispy onions

Mozzarella, sliced tomatoes, basil, olive oil and balsamic glaze

Feta, hummus, red pepper

Pesto with roasted vegetables

You can add cooked chicken, Parma ham, salami, ham, hot smoked salmon (flaky)...

Try and add some texture with nuts, crispy onion, toasted seeds... It will make a great difference!

@Zippidydoodah A challenge for sure! I'm a mum of three (now young adults) so I'm very aware about fuzziness...

Is there something they all like: pasta / potatoes / rice / any kind of veggies / chicken / cheese / bread / sauces / dips / meat / chicken / fish / burgers / bread / curries... If so, we can start from there.

You can make dishes with "add ons" - for example:
Someone likes pasta with only butter and cheese, someone else wants a sauce (tomato, cream based, bolognese...), someone does not prefer cheese, one will opt out of all veggies or even the slight sight of a chopped tomato... But you can create a base dish that you can add on to and satisfy all family requirements and keep it simple and easy for you. Stress free cooking and happy eaters!

No

ginger
Peppers (capsicum)
Eggs
Dairy - except the one sheep's milk cheese which she can tolerate
no meat - 2 vegetarians but we do all eat fish
Nothing too spicy (I am the only spice girl!)
I am not awfully fond of sweet potato or squash but can tolerate it!

What would you suggest??

In this situation I would do a tomato based pasta with the option of cheese on top for those who can have it. I put lots of veg in mine, red and white onions, mushrooms, celery.

We get a seasonal uk only veg box so currently getting lots of swede, parsnips,purple sprouting broccoli and beetroot that we are struggling to get through so any ideas for these ingredients would be great. We do eat meat and fish but try to limit the number of days a week so any veggie meals would be excellent.

How about a version of this really delicious winter salad? Adding the walnuts and some feta if making as a veggie main but leaving them out if using as a side dish.

500g cooked beetroot
500g roasted squash
100g red cabbage
optional - Handful of mint chopped & 50g walnuts

For the dressing
100ml olive oil
20 ml red wine vinegar
1 x tsp Dijon mustard
S&P

Chop the squash and roast at 180C for about 30 minutes until coloured and cooked. Allow to cool. Cut the beetroot into wedges and add to the squash.
Make the dressing by mixing all the ingredients together, whisk and season.
Slice the red cabbage and add to the vinaigrette (dressing) and leave to marinade together.
Add the cabbage and dressing to the beetroot and squash.
Finish with the walnuts and mint if you are using.

Lunchbox ideas please for a teen. Eats pretty much anything. Needs to be something that doesn’t need to be kept in a fridge during the day as she has to cart it around at school. Thanks

200g porridge oats
2 ripe bananas
2 eggs
2 tsp seeds (optional)
2 pitted dates (optional)
1 tsp baking powder
50-100ml milk
Top with nuts / berries/sliced dates / greek yoghurt or maple syrup.
Line 12 holes of a muffin tin with cupcake cases. Put the oats, bananas, eggs, seeds, dates, baking powder and 50ml of the milk into a blender / or use hand mixer and blitz to make a batter.
Pour evenly into the muffin tin.

Bake for 15-20 mins / 200 degrees, until well risen and lightly golden. Let them cool a bit before eating!

Google “breakfast muffins” and you will find lots of great, easy and delicious recipes!

I hate the look and texture of bananas but know they are so good for you I'd love to give this a go.

Silly question but can you even tell there is banana in it texture wise? I think taste of it would be ok

Sorry I have ARFID so texture is a big deal for me

Hi,
Here are some ideas with no ginger, pepper, eggs or dairy (only sheep’s cheese), vegetarian, no sweet potatoes or courgettes and not to spicy:

Lighter:
Greek style chickpea salad: chickpeas, cherry tomatoes, cucumber, red onion, olives, sheep’s cheese crumbled and a lemon / olive oil dressing

Lentil and roasted vegetable salad - roasted carrots, red onions, lentils - top with a tahini dressing

Mediterranean style stuffed tomatoes - fill with quinoa, olives and herbs, top with sheep’s cheese, bake in oven.

Tabbouleh with quinoa - fresh parsley, mint, cucumber, tomatoes - top with a lemon dressing, serve with some flat breads and hummus on the side

Home made cucumber and avocado “sushi rolls”

Mains
Butternut squash and lentil dahl - with coconut milk
Mushroom and spinach risotto - use sheep’s cheese instead of Parmesan
Tomato & butter bean stew with lots of fresh herbs and garlic
Pasta with a roasted tomato sauce
Lemon and garlic spaghetti with prawns
Pesto roasted vegetables with pesto (use sheep’s cheese instead of parmesan)
Vegetables noodles with a peanut or soy sauce
Lentil and tomato stew - serve with a crusty bread to soak up the sauce
Cabbage & carrot starry with rice, salted with soy sauce and sesame seeds

Carrot & lentil soup
Leek & potato soup
Tomato & basil soup
Serve with some nice bread

@babasaclover Hi, If you make sure to mix the banana properly (no lumps) I doubt you will feel the texture - only the flavour and sweetness from it. Good luck!
