Whole Beetroot - what can I do with it?

In my veg delivery box was a whole beetrot...prob medium sized.

What can I do with it?

I too was going to suggest roasting, but when its warmer, this salad is delicious:

Cooked beetroot cut into cubes
Feta in cubes
Spinach leaves or mixed salad leaves
Toasted walnuts
Drizzled over the top with balsamic glaze 😋

Another vote for smoked fish and horseradish. Also does well with grilled mackerel. Chunks of apple are a nice addition.

My other favourite is thinly sliced and warmed through in a frying pan or microwave with melted blue cheese. The salty/sweet/different textures is lovely.

slice up the beetroot into thin thin slices on the thinnest setting on your food processor, tip into bowl, with a tiny amount of veg or rapeseed oil and salt to coat, lay it all out onto a baking tray with baking paper and cook in the oven on 190 until you have delicious beetroot crisps.

I have it raw in salads or I roast it in chunks and have it on whipped feta.
I also make a curried traybake with it and chickpeas

I tried this at the weekend and it was delicious

agree on the gratin and also in a lentil and feta salad. Love beetroot - just wish it wasn’t so messy!!

Grated raw with some carrots, one Granny Smith apple, and pumpkin seeds in a vinaigrette dressing.
