Whole Beetroot - what can I do with it?

In my veg delivery box was a whole beetrot...prob medium sized.

What can I do with it?

It's nice roasted. I usually peel, roast in sections with other veg.

Peel it and poach it with red wine then make a salad with warm green beans, beetroot, goats cheese and pumpkin seeds with a french vinaigrette

I like to cook them whole with the skin on in the pressure cooker, then skin them (it slips right off) and serve sliced. It's the only way my kid eats beetroot and she really loves it.
I only bother if I've got 3 or 4 though, not normally 1. I get one a week in my veg box so I just wait until I've collected enough (they keep fine in the fridge).

And by the way, if it came with the leaves on you can also eat those. Chop thinly and saute with garlic for example.

Take the skin off, grate raw, add yoghurt, a sooonful of ground cumin and a bit of salt, delicious!

Roast whole, peel the skin off, slice thinly
Arrange slices on a platter
Put ball of burrata on top
Scatter with toasted pine nuts
(Handful of rocket optional)
Dress with pesto, let down with a little oil and lemon juice

My fave is beetroot and potato gratin ie thinly sliced baked in a cream/milk mix as a side dish or main with salad

I usually cook it in the slow cooker. No attention needed that way.

Then I can dress and serve it however and whenever.

If you haven’t eaten fresh beetroot before, go easy. I do really like it but (sorry, TMI alert) it’s like a bulldozer blade attached to a rocket for my insides these days.

Peel, cut in to quarters/wedge shapes if it’s a large one, drizzle in olive oil and plenty of balsamic vinegar, salt and pepper, and pop in the oven for about 25-30 mins. This is a regular feature on our Sunday roasts and it’s delicious!

Beetroot ie delicious grated raw, with carrot and / or apple. Unlike the PP who slow cooks beetroot, I cook mine in a few minutes in the microwave. I usually scrub them with a veg brush: I don’t peel them unless they’re large, ugly and brushing ( wet or under a running tap) doesn’t clean them adequately.

I peel it then toss in a little rapeseed oil and roast with parsnips, spuds and carrots. If you roast long enough, the edges caramelise. Deelish.

Sri Lankan beetroot curry is a favourite in our house; roasted in wedges and served with a curry sauce made from coconut milk, nigella seeds, yellow mustard seeds and kafir lime leaves.

Serve with sticky rice and a spicy sambol of some kind.

Bake it in its skin , not to mush
slice thinly serve with crumbled feta, over watercress or rocket
a mustard olive oil vinegar dressing comb works well
other favourite dish is peel and grated with chopped herbs or whatever u have to had
any dressing also
makes wonderful side to so many dishes

It's very good with smoked fish and horseradish. Another thing to do which I don't think anyone's mentioned so far is to make borscht, i.e. beetroot soup.

I would usually keep it separate from other vegetables because the juice bleeds and turns everything pink, which I personally prefer to avoid.

Beetroot and horseradish dip. Bake it, then scoop out the middle, season well, add a dash of natural yoghurt and sour cream and a good dollop of creamed horseradish.

For minimum mess, trimming top and bottom and cutting into wedges before roasting in the skin works a treat and I don't bother with further peeling. I like it with a roast or tossed into puy lentils with feta and an olive oil dressing.

Do be aware that you will get a good demonstration of how long food takes to pass through your body and may even get pink pee - which can be a surprise if you're not expecting them.

Any of these sound good - just a warning if it affects you like it affects me, when you pee/poop pink the next day it isn't blood and won't hurt you!

I too was going to suggest roasting, but when its warmer, this salad is delicious:

Cooked beetroot cut into cubes
Feta in cubes
Spinach leaves or mixed salad leaves
Toasted walnuts
Drizzled over the top with balsamic glaze 😋
