What are your favourite tofu recipes? Ideally fairly quick and healthy

I want to get more tofu into my diet, especially for the calcium

At the moment, we whizz silken tofu into soups which is great, and use firm tofu with mixed success in other recipes.

I'd love to eat it once or twice a week, and have a bunch of go-to recipes `I use

We also love tempeh but I think that has less calcium.

Mapo tofu with rice and greens

Fried tofu slices with peppers

Tofu puffs simmered with chestnuts, cinnamon and star anise in a dark soy broth

Silken tofu warmed in the microwave and topped with Bombay mix, chili crisp, sliced spring onions and some soy sauce and sesame oil

Silken tofu cold from the fridge topped with sliced avocado, fresh coriander, slightly diluted soy and sesame oil with a shake of toasted sesame seeds (a lovely summer cold dish)

It's probably very unhealthy but if you live in / near a city and there are Chinese / far east super markets you can buy puffed fried tofu which is gorgeous in ramen, Thai red curry, on salads (or straight out of the bag). Oh wow - I had no idea so many of you ate tofu! This is utterly brilliant ... we're easily going to be eating it twice a week!

And just curious - are you eating it because you are vegetarian or for other reasons? I'm trying to up my calcium without eating lots more dairy

Meera Sodha (the Guardian) has some fab tofu recipes.
We also really like the Tofoo cookbook - Tofu with OK Sauce and the dhal with tofu are big hits.
I absolutely LOVE tofu!

Grate the plain extra firm tofu (half a block of the Tofoo brand works well) on to a baking tray. Add about half a teaspoon to a teaspoon of salt, pepper, onion powder, garlic powder, chilli powder and smoked paprika and a splash of olive oil. Mix it all with your hands, spread out and bake for 10-15 mins. It goes crispy. I like it in fajitas with vegetables.

Two out of the four in my household are veggies (DH and DD). The 2 recipes I posted are favourites of my DD who acquired a taste for tofu as I kept encouraging the healthy protein options

We eat it because we rather like it and it add variety

  • we tried it out of curiosity and it stuck

We don't do takeaways and such regular but like to have extra nice dinners at the weekend

I blend silken tofu with melted chocolate for a chocolate mousse. Sprinkle with toasted hazelnuts and grated chocolate.

the best recipe is black pepper tofu from Yotam Ottolenghi, otherwise a make variations of banh mi or toss in rice flour flavoured with salt and Chinese 5 spice, and fry until crispy, then eat with sweet chilli sauce or other dips.

Most of the time I add to stir fries and toss with chilli bean, hoisin or yakisoba sauces.

In answer to your question OP I eat it because I love the taste and texture. It's easy and versatile to cook, no animal products, cheap (especially from Chinese supermarket) and the long-life stuff keeps for ages so it's handy. I'm not vegan but have reduced meat for environmental reasons, easy with tofu.

We eat it because we want to reduce meat consumption (environmental, ethical and health reasons) but struggle to find veggie sources of protein that DH can eat as he's allergic to legumes.

Yes we've cut our meat consumption dramatically but as bean/chickpea lovers its been easy... I'm looking forward to getting a fair amount of tofu in the mix.

It just felt a little more intimidating to do... but now I've got all these amazing recipes from you, I'm actually quite excited
