what can I make with condensed milk?

I asked dh to buy "carnation lite" evaporated milk, and he came back with carnation lite condensed milk and I didn't realise until I had opened it. It is sickly sweet, and I can't think what to do with it, but hate to throw food away.

ooh, you can mix it with crushed up arrowroot bisciuts and chopped dried apricots (and choc chips if you like). I think you need 1 or 2 packets of biscuits. Mix it all up, roll into little balls and roll in coconut, then keep in the fridge. Its a nice crafty thing for DC to make, and quite tasty!

Ooh - i like those shortbready things - don't know how to make the caramelly bit though. Can do shortbread.

I haven't heard of nigella's breakfast bars.

I am supposed to be trying to lose weight...or at least trying not to gain any MORE weight................

Ds2 loves fudge. He has 5 friends here. If anyone has a recipe, they could have one piece each and that would stop me eating it. I love fudge too, but they are teenagers and would gobble it up so fast I wouldn't have a chance.

Have found a fudge recipe, but it requires golden syrup - which I don't have. So I might have to think again, as I don't really want to go and buy golden syrup, as that is something else I never use. Will do a bit of a search.

That toffee fudge recipe looks nice lucewheel.

(Actually - if I just leave it out on the work top, there is a chance the boys will eat it anyway).

cocnut kisses - easy for children if they are old enough to bake.

mix desicated coconut, tin of condensed milk and an egg. Shape into little balls and cook for 10 mins.

Ahh! the millionaire's shortbread looks achievable. I have leftover easter eggs.

Now - do I offer them the opportunity to be creative, or will that result in a wrecked kitchen?

We used to have condensed milk sandwiches as kids. They're delicious! Just spread it over the bread and enjoy!

Ooh, connie-onnie butties!

There was a recipe in the Guardian Family section the other week that was v. lush & dead quick n' easy - one tin condensed milk, 1 packet of digestives, approx 250g choccy.

Melt the choc, crush the digestives, stir the connie onnie into the choccy then mix in the biccies, push into a baking dish and smooth over, then chill til firm (couple of hours). Cut into slices/devour at will.

just put tin of condensed milk ina saucepan with water to cover - boil for 2 hours ( watch it to make sure it doesn't burst)
after 2 hours leave to cool - when you open it it is soft tofee, pour over a biscuit base, add bananas and then top with cream - fab banoffee pie, with no messing{smile]

Chilled lemon flan

8oz crushed digestives
4oz butter
2 somethings of castor sugar

Tin Condensed milk
Carton of double cream (not the small one, not the extra large one, themedium one
3 large lemons

Mix the biscuits with melted butter and sugar and press into 8inch flan dish (not loose bottomed) Cook at 180 for 10 mins and leave to cool.

Meanwhile mix together the condensed milk, cream and grated rind of the 3 lemons. Gradually add the juice of all 3 lemons. Top biscuit base and chill.

Decorate with slices of lemon and cream.

There's also Nigella's chocolate cake (from How to Eat) which uses condensed milk.

tablet (scottish fudge)

once you try it you will never ever eat normal fudge again! its gorgeous!

Tablet Ingredients:

1 teacup of milk
Large tin of condensed milk
900g of sugar
100g of butter

Tablet Cooking Directions:

  1. Melt the butter and sugar. Add the condensed milk and the teacup of milk.
  1. Stir and turn up the heat and keep stirring until it reaches boiling point.
  1. Turn the heat down low and stir for 45 minutes (chair and book optional!)
  1. Remove from the heat and beat 60 times with a wooden spoon. Put a wee bit on a plate and if it sets then it's ready to be put onto the shallow trays.
  1. Score the tablet surface marking into squares and allow to set and get cold.
  1. Best washed down with Irn Bru!
