As per the title!

Six people. Only one is veggie but would like to do one dish to meet all requirements.
A starter that is:

  • vegetarian
  • gluten free
  • soy free
  • legume free
  • nut free
  • easy for me to make in advance!

Also ideas for things to go alongside a Jannson's Frestele (I had to google too!) that a Swedish friend is bringing as the centrepiece of the main. I'm tempted to serve a ham alongside, and pickled beetroot, but that's as far as I've got!

Egg mayonnaise - DH would have a fit if I didn't make him this at Christmas! With a loaf of delicious focaccia my local bakery produces. (just get a small GF loaf for the GF person)

Something based round a goats cheese salad? Soy is a particularly hidden allergen. Sounds like most of my DD’s allergies and it is difficult

If it helps at all - I think Nairns GF oatcakes are free of the above allergens

Home made gf billinis (super easy), with creme fraiche, v thin carrot peel and dill.
Salmon for others.

Feta, watermelon, tomato and rocket dressed with onion marmalade or balsamic dressing.
Very easy to make and nice and light before the main.

Soup is the obvious choice but it always fills me up too much!

I would do griddled hispi (sweetheart) cabbage - there's an ottolenghi recipe where you grill it in quarters with olive oil then drizzle it with a fried coriander sauce. In terms of making in advance, I do the sauce (which is really an oil) in advance and the griddling, then just finish in the oven.

Or do a big veggie meze platter, if you're not having a traditional main then you don't need to focus on a traditional starter either.

With the main, I'd have garlicky greens and also something pickled, it sounds quite rich. New potatoes boiled and dressed in a mustardy dressing would be good too.

Tomato soup made with tinned tomatoes, passata, veg stock, tomato purée

you should embrace the Swedish Julbord as you have some of it coming anyway :)
to serve with the Jansens frestelte you could make any or all of Köttbullar meatballs 🤤, a gammon, gravadlax, prawns, herring (mmmmm my best bit of the julbord) little chipolata sausages as Prinskorv sausages are popular for Julbord, pumpernickel or rye bread with cream cheese abd salmon roe to put gravadlax on, cucumber salad, hard boiled eggs

usually I make a Prinsesstårta for pudding with special almond Caramels but I'm not this year. I will be making Vafflor for our younger guests though. Rice pudding is also traditional. We having it on boxing day

Roasted beetroot salad

Get different coloured beetroot, roasted in foil in advance. Serve with lambs lettuce, thinly sliced red onion and a mustardy vinaigrette with red wine vinegar

You could serve black olive tapenade on little gf toasts too

To go with the Frestelse, your idea of a ham is a good one, or perhaps spatchcock poussins? It's hard to know what will go with a dish of fishy dauphinois potatoes, perhaps more fish? Poached salmon or baked halibut steaks?
But what will the lone vegetarian have to eat? (Nobody say wafer thin ham!)

You clearly know your julsbord! I'd love to lean into it but wasn't sure where to begin. I will certainly google all your suggestions and see how they can be made/adapted.

I think the cook is going to mow it with capers so it can serve everybody. The advantage of a julsbord is that there are lots of things so should be able to have plenty that is veggie even if I do serve a ham.

I'd like to serve ikea-style (shush!) meatballs but I'm a bit worried they'd be a pain to make!
