Looking for inspiration of what soup to make for starters on Christmas day.

I attempted this recipe the other day but found it too spiced for my liking.

Zingy & spicy parsnip soup recipe | Jamie Oliver recipes

This is a spicy parsnip soup recipe with Asian flavours and a fresh chill-ginger kick for added heat. It's a simple parsnip soup taken to the next level.

My favourite wouldn't be a good starter, it's too filling.

Gently fry a chopped onion and diced carrot for as long as you can be bothered. Add a cup of red lentils (maybe 1 1/2 cups) and 2 or 3 slices of bacon, or a slice of gammon. Simmer until the lentils are cooked. Hoik out the bacon/gammon. Blend, season. Chop the bacon/gammon and add back to the soup.

The veggie version has 3 or 4 carrots and no bacon/gammon. Also a lovely comforting winter soup.

Hmm not feeling inspired so far..

Would people say roasted veg soup has a nicer flavour than just boiled?

Yes roasting makes all the difference.

The brussells sprouts receipe lost me at the ingredients list, who needs sugar in their soup?!

OP posts:
xmasdealhunter · 16/12/2024 12:52

The sugar is used to caramelise the onions, you don't add it directly into the soup. I use less sugar than recommended, probably half the amount, but taste as you go as it's down to preference

I did a fresh tomato soup one year which was lovely.

I can't find the recipe I use but this is very similar. It's relatively light to have before a meal. I find soup too filling before a meal to be honest. Delia does a verysoup nice parsnip and apple one which in a small portion would be christmassy.

MadamDicey · 16/12/2024 16:36

This is my go-to tomato soup
Tomatoes ,red peppers, red onion ,carrot , whole garlic add chilli powder, paprika, and olive oil and roast until soft
squeeze out garlic, put everything in a blender , with a little stock, and fresh spinach blitz until smooth serve with creme fresh sourdough bread or savoury crackers 😋

This parsnip, leek, apple and mustard soup is a favourite here. Or if you fancy something a bit different then this maple and miso celeriac soup is also delicious.

Georgyporky · 16/12/2024 18:45

If it's the full-on Xmas lunch, perhaps soup would be too much ?

Or how about a gazpacho?

Light & refreshing before the gut-busting main event ?

Stilton and broccoli is my favourite soup.

Celery and almond.
Saute a finely chopped onion and a head of celery. Try to find one with lots of leaves and save the leaves.
Add a couple of pints of vegetable stock and simmer until celery is soft. Puree.
Add salt, black pepper and white pepper to taste. Add a couple of tablespoons of ground almonds and stir whilst reheating. It should thicken to a creamy but light soup. if you make it in advance, it will thicken even more.
Sprinkle with chopped celery leaves and some flaked almonds.
I've seen similar recipes using milk or chicken stock.

Sweet potato and roasted red pepper, a Bill Grainger (RIP) recipe. Start by softening onions, remove and add 2 cm. cubes of peeled sweet potato, sweat until soft then add a little rosemary and re-add the onions for 5 mins. then add your stock of choice and simmer on a low heat. Grill red peppers until burned, then take off the skins, add to the simmering sweet potato for 15 mins. Blitz all preferably using a stick blender so you keep some of the sweet potatoey texture. Season to taste.

Courgette and cashew soup is delicious.

I also like a lobster bisque.

I like the addition of nuts to add protein or full on meat/fish soups

Cullen skink is a favourite, or another sort of chowder perhaps

French onion soup using a really good beef stock for the base

Not sure now as it was a few years ago but madam dicey's below sounds good. I would keep it thin and light though.
