Looking for inspiration of what soup to make for starters on Christmas day.

I attempted this recipe the other day but found it too spiced for my liking.

It's so so good, I don't do it with the dumplings if I'm in a rush but serving with pancetta is def worth it

I had this in Bruge, many years ago in a little restaurant where there was only one thing on the menu, wasnt in English, it was a locals place and I just asked what everyone else was having and it was this.

I think replicated it at home, it is fantastic, Ive never cooked it since but really should do, it was amazing

I should say I did my version with chicken, I think in the restaurant it might have been rabbit and fish.

Easiest soup ever - cut a butternut squash up into cubes, coat with olive oil some herbs (i like rosemary and thyme), then put in the oven on a high heat for 15 mins. Then turn oven down, and add a chopped red pepper and a red onion. Roast for another 30 minutes then let cool. Put in blender with a pint of vegetable stock and season to taste with salt and pepper. Job done. I make this around twice a week at the moment, and you can always add a small can of coconut cream for extra flavour.

I was served celeriac and apple soup at a Christmas lunch last week. It was divine. I'm going to try and recreate it tomorrow.

My all time favourite soup is broccoli and stilton (basically your second recipe but with blue stilton rather than cheddar - I don't follow a recipe per se, just keep tasting and adding more cheese and black pepper as required).

Borscht is also lovely and looks quite festive - the soup is red and then you have a swirl of white creme fraiche and fresh dill for the green! Most recipes leave the cubed veg etc so it's chunky, but I personally prefer to blend it. There are a lot of variations, dome with mest or beans etc, but this recipe looks closest to my version -
