Dessert using frozen berries?

I have a bag of frozen, mixed berries I'd like to use up. Any ideas/recipes that don't result in a watery mess?

I've seen one where hot melted white chocolate is poured over softening the berries and slightly melting them.

Do the Ivy classic recipe. Melt some chocolate & cream & pour over the berries and use the heat of the chocolate to melt the berries (doesn't work particularly well on bigger berries like strawberries & blackberries)

The Ivy does this with hot melted white chocolate sauce poured over and some vanilla ice cream on the side. Yum.

I do this as well or defrost and put them into a cake.
We did it with pouring melted chocolate over and none of us liked it - too sweet and weird texture.

Some great ideas thanks. I don't think a smoothie or porridge is right for a dessert though 😆

I'm leaning towards the summer pudding or crumble with added apple. Maybe some cornflour will help thicken the sauce. But the melted choc over the top is sounding good too 😋

You won’t get the same crunchy effect as using fresh summer berries (you know, if you “scatter berries over”). The swelling of the cell fluid caused by freezing has burst the cell walls.

Look for a recipe that require cooking/poaching. You can drain the juice (or syrup if you have added sugar) and keep for drizzling or another purpose.

I'd avoid cornflour- I find it really dulls the flavour of things. Can you defrost, pour off the juice into a pan, boil to intensify flavour, add some booze then put in a dish and add a crunchy crumble topping?

Drain the fruit ,make a meringue roulade , fill with the drained fruit and serve with the juice as a coulis on the side. Usually have to add a bit of sugar to the juice , or blackcurrant squash , and a bit of cornflour to thicken it .

I put them (frozen) into a fairly shallow dish and make an almond sponge to go on top.

I make this hot berry sponge quite often. I just do the sponge mixture all in one (provided the butter is soft it works fine). When you blob the sponge mixture on it looks like it won't be enough and there might be gaps, but it always spreads when it bakes. I think it takes a good 45 minutes to bake. Delicious served warm with custard, or cream. Or both. Blush

Cook them with a little orange juice until they break down a bit and have the texture of a compote. Pour hot compote over good vanilla or white chocolate ice cream. Or allow compote to cool and fold into whiped cream to make a berry fool.
