What to do with green lentils?

Got given 2 boxes of Merchant Gourmet green lentils. Had a brief search in recipes section but everything comes up with tinned lentils. What can I do with them?

I do sausages and lentils a la Nigella with them. They’re a good substitute for Puy lentils in any recipe.

Stick them in a vegetarian chilli. Fry off vege/spices as usual. Add passata and lentils. Cook until soft then add drained kidney beans.

Fry onions, carrots, garlic, thyme. Add red wine and stock. Add lentils and cook. Lovely with dauphinois potatoes and some green vege.

Everything that uses tinned lentils can be made with dried lentils, just have to cook them first. You can cook big batches then freeze ready to use.

Exactly this!

I bring them to a boil with a bay leaf and sometimes kombu, then lower the heat and simmer until soft (25-30 min). Add salt and drain but keep the liquid to use as broth for soup, risotto or cooking things like potatoes or pasta.

Where I am (not in the UK), green lentils are slightly hard to find. We have brown lentils in abundance; red lentils are less common and a little bit more expensive but still available.

I miss green, and if I get my hands on them I use them to make a kind of French style marinated "lentil salad" which I keep in the 'fridge to add to green salads or (in warmer weather) use as a cold side dish. You can keep this very basic - just white-vinegar-marinated green lentils with maybe a little bit of onion and other herbs/spices or go full-on salad with red onion, cucumber, bell pepper, carrot, celery, etc. added in.

Lentils with caramelised onion aioli and crispy chilli oil. The onions take longer to caramelise than the recipe suggest but it’s simple to make and delicious.

@minipie It was largely thrown together but I used green lentils (that had been cooked), a tin of chopped tomatoes, four large garlic cloves, a large carrot and a large white onion. I added some green chilli too. In a little bit of olive oil I softened the carrot, onion and garlic then added tomatoes, lentils and chilli and black pepper. Topped up with chicken stock (any stock will do). Simmered for 20 mins or so until thickened. Then I used a stick blender just to break it down slightly. You can put cream in but I didn't have any. It was lovely!

Puy or green? (I only ask because I've only ever seen puy ones in the Merchant Gourmet boxes.

Chilli or shepherd's pie is delicious with green lentils. DH prefers them to mince now.

The absolute BEST thing you can do with them is sprout them! Put them in a jar and soak them in water for 10 minutes. Drain and then leave them on the side. Rinse them out every day (I just cover the top of the jar with my hand to drain the rinsed water off them - no need for a fancy sprouting contraption). After about one to two days, they will start to sprout. Add them to a salad then - don't leave it until they've grown too long and straggly! They're sooo delicious!

I fire them into virtually anything I'm doing in the slow cooker to pad it out a bit and add a bit of extra nutrition! Apart from a full chicken!
Also make lovely lentil soup most weeks too as we are in Scotland it's virtually the law in winter!

Merchant gourmet don't sell dried lentils, they sell lentils in pouches. Lentils in pouches are identical to lentils in tins, so use the recipes for tinned lentils.
