Friend is hosting a get together at the weekend and everyone has to bring a soup and we will all have little mugs of each crown a winner just for fun. Think there is going to be 8-10 of us. Gone are our wild weekends out partying 😅. I think most people will be bringing along a slow cooker or cauldron so they would need to be something that would do ok kept warm like that. No dietary requirements apart from a nut allergy. What soup would you prepare to take the prize? Please no criticism of how you think it's a rubbish idea or anything as it's just a bit of fun.

Edited to add that I know someone is doing French onion another is doing a tomato soup.

What a great get together. Placemarking for the recipes, especially the lemon rice soup.

Right now I am listening to the simmering of a pan of Ottolenghi savoy cabbage and parmesan soup. I love it at this time of year but I'm not sure it's the showstopper you want. Amazing croutons though.

Looked up that recipe. Haven’t tried doing croutons that way but they seem healthier than my
fried bread cut into chunks

Great idea, OP.

Can I suggest Austrian (or, historically speaking, Austro-Hungarian) Garlic Soup
There are many and different recipes online. Here is just one:
https://www.lavenderandmacarons.com/austrian-garlic-soup-croutons/

You can of course subsitute veg stock for chicken or meat ditto.

SadSadGirl · 05/11/2024 17:50

I love this idea! No great ideas that haven't been said, but I think the simplest soups can be perfect if done well.

Leek and potato with rosemary

Roasted tomato and red lentil

Pumpkin

Chunky vegetable and barley

I would make a Thai spiced butternut squash soup. Similar to a couple of pps above, but made with Thai red curry paste.
Roast the butternut squash in the oven whole for a couple of hours.
Fry off a small onion, add a spoon of that red curry paste and a spoon of concentrated stock (veg or chicken, whatever you’ve got in) salt, pepper, red chillies to taste and a sprinkle of cinnamon.
A tin of coconut milk, then whizz this up with the flesh of the butternut squash and you’re done. Delicious!

Parsnip and maple syrup. Mmmmmmm.

Do you have a recipe for this, please? It sounds delicious.

mondaytosunday · 05/11/2024 18:09

My Golden Butternut Squash soup. OMG so simple so moorish.
Gently fry a couple chopped medium onions.
Add a kilo of chopped peeled squash. Simmer for ten minutes.
Add generous amount of ground:
Cumin, coriander, smoked paprika, Italian garlic mix, and whatever else you want, occasionally I add fajita spice or BBQ spices or even Chinese Five Spice! Salt.
Add 800ml chicken stock (can use vegetable stock).
Simmer for about 20 min until squash is soft.
Add 200ml double cream. Or coconut milk.
Blend well.
Fry some chopped chorizo (optional) and shelled pumpkin seeds. Fry some cubed toast in butter or the chorizo oil.
Add the chorizo/pumpkin seeds to the soup, or top the soup with them and the croutons when serving.
Soup will last for three or four days in the fridge and tastes better the second day.
It is hands down the most yummy thing.

RemusLupinsBiggestGroupie · 05/11/2024 18:28

I think I’d go for a black bean soup with nice things to scoop and sprinkle on top or a spiced sweetcorn chowder also with sprinklings.

writingfever · 05/11/2024 18:51

Can win because of the surprise factor: Burmese samosa soup

Georgyporky · 05/11/2024 19:12

Vietnamese Pho. I'd cheat & buy the beef stock, add the veg, then let people add the raw beef just before eating.

IOweMySanityToBasilParsley · 05/11/2024 19:32

Some fab recipes here 😍

DancefloorAcrobatics · 05/11/2024 19:45

What a lovely thread!
My go to is a red pepper (2-3 red roasted in the oven with olive oil ), tomato (any can will do) and goats cheese (the fresh philly cheese style one), some veggie stock and seasoning.
I usually just chuck it into the soup maker and done!
Sorry about the vagueness but it's my own concoction. I would however, go slowly on the cheese, as its quite strong. You can add it after cooking to taste while it's still hot....

IbizaToTheNorfolkBroads · 05/11/2024 20:04

I do a spiced carrot and chickpea soup, that I think I may have originally got from Cooking on a Bootstrao.

Roast carrots, onions and garlic
Optionally, add chilli and /or root ginger
Add a time of chickpeas
Sprinkle with Smokey paprika
Blend up with some good veg stock.
I like it a bit chunky.

Homemade chicken noodle

Made with homemade stock

TheLadyIsAVamp · 08/11/2024 16:24

Thanks everyone again. Everyone has now confirmed what they're bringing in our group chat so we're having

French onion soup
Tomato chilli and pesto
Thai butternut squash
Borscht
Leek & potato
Chicken fajita soup
Jamaican my head spin (I'm assuming some kind of soup with dumplings 😁)
Lasagne soup
Soto ayam (Indonesian chicken noodle soup, I'm bringing this one)

LaMarschallin · 08/11/2024 16:35

What a menu - sounds gorgeous!
Just looked up soto ayam which is just my sort of thing.
Please let us know how it goes Smile

ErrolTheDragon · 08/11/2024 16:49

Sounds like a lovely varied mix.

NoNoNona · 08/11/2024 18:08

Chestnut and mushroom with thyme and you must use dry sherry.
Jerusalem artichoke.
Garlic soup, known in my family as skiing soup.
A really good potato and leek soup.
Sri Lankan Rasam.

TheLadyIsAVamp · 10/11/2024 02:22

For anyone interested I am just home with lots of little individual pots of soup for the week! I came second which I'm very upset about as the prize was a witches broth soup cauldron bowl with a broomstick spoon which I've immediately ordered for myself 😅.

I came 2nd, the Jamaican soup was the winner as it was incredible. It was a spicy, herby , tangy beef and pumpkin soup with spinner dumplings and i can't wait to eat the portion I've brought home with me 🤤.

We had a great night, lots of laughs, wine and great music! My friend is an amazing baker and there was a few varieties of beautiful breads, garlic dough balls and cheese straws for dipping followed by a beautiful dessert. I'm feeling tipsy, stuffed and grateful for some wonderful friends. Highly recommend a soup night if anyone is after a bit of a different night in with friends.

That's sounds like such a nice night out with friends - you sound like a lovely bunch! Well done on 2nd place! Any ideas on next challenge - perhaps mini savoury or sweet pies?

Dustyblue · 10/11/2024 03:16

I have no idea what a spinner dumpling is but I love the sound of it!

Witches broth soup!! Did you recite Macbeth 😂

It's coming into summer here in Oz, but I don't care and am making minestrone. Soup transcends the seasons!

Thanks for a great thread OP.

sashh · 10/11/2024 09:21

Congratulations @TheLadyIsAVamp

It sounds like a fun evening.

I think it would make a great evening in January or February when it is cold and damp and people are often a bit hard up.

snowlady4 · 10/11/2024 09:27

Wish I had 8-10 friends that would eat soup with me! Where did you find these people? Getting one person to have a coffee is an achievement here!.. anyway, I digress...
I love soup... My personal favourite is a chilli tomato but, to suit everyone I'd be inclined to go with either a creamy butternut squash- perfect this time of year, add sour cream on serving and give it the fancy swirl! Or a nice, hearty minestrone!
Have a lovely time.
Will there be bread??

snowlady4 · 10/11/2024 09:30

Oh just saw your update!
Well done on your silver medal!
Glad you had a lovely night!

And would you have a recipe that you could share please?

Apologies for late reply
