Friend is hosting a get together at the weekend and everyone has to bring a soup and we will all have little mugs of each crown a winner just for fun. Think there is going to be 8-10 of us. Gone are our wild weekends out partying 😅. I think most people will be bringing along a slow cooker or cauldron so they would need to be something that would do ok kept warm like that. No dietary requirements apart from a nut allergy. What soup would you prepare to take the prize? Please no criticism of how you think it's a rubbish idea or anything as it's just a bit of fun.

Edited to add that I know someone is doing French onion another is doing a tomato soup.

Anyway, it sounds like a great idea!

I always make roasted red pepper, tomato and lentil soup when dd is coming home.
(Recipe - roast 3-4 peppers and remove blackened skin, meanwhile fry an onion or two and some chopped carrot, perhaps a stick of celery if I've got any to soften and sweeten. Blend the veg with 2 cans tomatoes (can reserve one red pepper, diced), return to pan with about 6 oz red lentils, a veg stock cube, a tablespoon of smoked paprika plus a bit of hot paprika or chilli and a couple of bag leaves, simmer 20 mins or so to cook the lentils. Serve with flaked Parmesan.

Someone mentioned pesto upthread - some people are allergic to pine nuts so I'd check on that or for a soup topping maybe omit?

If you're driving there, cling film the top, tape on the lid, plastic bag it and then strap it into the car. The internet is full of photos of what happens if you have to brake sharply while transporting soup or stew...

Broccoli is always my favourite but my dh does an amazing lemon rice soup.

I like the look of @HundredAcreOwl s soup though and might give that a go tomorrow 👍

Ooh, would you share the recipe for the rice soup?

@AdaColeman I love Borscht and only had it in restaurants. Can you share a recipe and does it really get blended? I only had the chunky pieces version.

@WhiteFoxLady of course!

Chop courgettes, aubergine and a few fresh tomatoes.

Fry on medium heat in garlic oil.

Add a tin or two of chopped tomatoes. Heat.

Add chicken or vegetable stock.

Add teaspoon of Harissa.
Add some garlic salt (if you like garlic):
Season.

Simmer tor 15-20 minutes.

Use stick blender.

Serve and sprinkle crumbled feta on the top.

I'd go for a smoked fish chowder as the absolute king of soups, you literally can't beat it. Cullen Skink is the easiest to get beautifully flavoured, but smoked salmon chowder is a close second.
Can give recipe if you want it.

The thing that makes the best soup is homemade stock from bones - roast a good quality chicken or turkey, strip the carcass, smash the bones and make the stock. You could use the meat back in the soup especially if you do something like the tortilla soup.

I've got a recipe for Swiss cheese and onion soup which I love.
It's a bit time consuming in that the onion part starts with masses of thinly sliced (not chopped) onions cooked slowly for ages until really caramelised, but once that part's done it's easy. Just make a standard French onion soup with your melted onions then make a cheese sauce using Gruyere and stir the two together.
You can add the standard grilled bread and cheese slices to float on it but I quite like slices of garlic bread (grilled again) on top.

I am drooling at some of these recipes.

French Onion is my favourite, but someone is already making that! It should be served with a cheesy crouton on top with anchovy paste.

Pumpkin soup, either plain with nutmeg or with ginger & curry spices.

Lamb & barley soup is fantastic, a bit like Scotch Broth.

I love the celeriac soup recipe above. Tis an underrated vegetable & brilliant in soup.

A classic chicken noodle soup goes down well.

Wish I could come along, what a great idea!

  • Make cauliflower cheese in the usual manner.
  • Add stock.
  • Blend.
The secret is in the seasoning, but I'm not giving away all my soupy secrets to MN!

I’m afraid I can’t give quantities as we are very much the ‘chuck it all’ in type cooks.
So

Basic broth mix
Fry carrots, garlic, onions, celery ( any other veg you like, dh also loves adding cabbage )
Add rice and a few bay leaves. Quantities of rice average half a usual adult serving / person )
Continue frying a little to coat all the rice.
nb……barley is also incredible as an alternative as it creates a creamier texture like barley broth
Add vegetable stock, enough to fully cover the veg
Continue cooking whilst you squeeze in fresh lemon juice to taste. Half / one whole lemon.

Cook, covered until rice is fluffed up
Add more stock if you prefer a thinner soup

Yum!

Ps Mr Fernley Whittingstall does a great barley broth recipe too!

A bit different, I really like this hot and sour one from Gok Wan, although I use water chestnuts rather than bamboo shoots, and because of an error in the book version I have, I also add spring onions!

I’d go a bit Asian - tom yum or similar with lots of tasty toppings or Mexican - a chicken tortilla soup with all the toppings.

Oh some fabulous ideas thank you all, I wish you were all coming too! I make lots of different soups but they're usually very hearty filling meal type ones which don't seem quite right for something like this. I'm toying with the idea of a mexican street corn soup like this at the moment but am even more unsure after reading these ideas!
