Favourite vegetarian meals that are enjoyed by meat eaters too?

When I cater for a mix of guests, I usually make a meat and a veggie version of the same thing (eg curry, tagine, chilli,fajitas) or make a vegetarian main with plates of chicken, meat or fish to go with it for those that want it - for example mushroom risotto or a vegetable paella. Or something like tapas where there is a variety of dishes with plenty to suit everyone.
We are going to have people staying with us for a few days including a vegetarian. We'll be busy so would like to find some vegetarian dishes that the meat eaters would enjoy too without missing the meat or fish, so that I only have to make one dish. For example, the meat eaters in our family enjoy a lasagne I make with a filling of what is essentially home made ratatouille with a can of lentils mixed in.

Mainly looking for everyday family style meals but also something a bit more special for their last night, that the meat eaters will be enjoy without missing the meat.

Burnt aubergine chilli is amazing and everyone loves it. Use a jar of roasted aubergine instead of faffing about with a fresh aubergine.

We eat veg korma, aubergine parmigiana, homemade veg soups like leek and potato, french onion or blue cheese and brocolli, veg lasagne, jackets with beans and cheese, pear and blue cheese salad with rocket, broccoli and potato bake, macaroni cheese with sweetcorn on side, veg roast dinner, aligot with veg to accompany like leeks or cabbage. Pancakes with mozzarella and asparagus (can add parma ham for meat eaters) then white chocolate and blueberries Also a Thai stirfry of veg, cashew nuts, sticky rice

Here is my recipe for vegetarian moussaka :

1 red onion
2 garlic cloves
1 can chopped tomatoes
1 can lentils
100g mushrooms
1 large aubergine
1 tablespoon tomato puree
1 cinnamon stick
1 teaspoon garlic powder
1 teaspoon oregano or thyme
1 glass red wine or vegetable broth
125g plain greek yoghurt
125g mascarpone or ricotta cheese
50g parmesan
3 eggs
1 teaspoon ground nutmeg
Olive oil
Salt

Preheat the oven to 200C

Peel and finely chop the onion and garlic. Slice the mushrooms. Slice the aubergine and cut each slice into half.

Place the slices of aubergine in a bowl and add olive oil. Mix to coat the slices. Place aubergine on an oven tray, season with salt and bake in oven for 20 mins until soft. Take out of oven and reduce oven heat to 180.

Meanwhile, fry the onion and garlic in olive oil over a low heat for 5 minutes. Add the mushrooms and cook until soft. Add tomato puree, canned tomatoes, lentils, red wine or broth, cinnamon stick, oregano and garlic powder. Bring to the boil, stirring and then reduce heat and simmer for about 20 mins. Taste and add salt if necessary. Add the baked aubergine pieces and cook for a further 5 minutes. Allow to cool slightly. Remove the cinnamon stick.

In a bowl, beat together the yoghurt, ricotta or mascarpone, eggs, nutmeg and a little salt, until the mixture is smooth.

Place the lentil mixture in a large oven dish and pour the egg mixture on top. Grate the parmesan over the top of the dish.Bake in the oven for about 30 mins until the topping is set and bubbling.

Serve with green vegetables or salad.

Unless you omit the parmessan or use a vegetarian alternative that's not vegetarian.

Why do people keep saying "everyone loves burnt aubergine chilli"? I don't enjoy burnt anything. And aubergines taste like fag ash.

I don't know anything about Fodmap, sorry, but I sympathise with your DH as they are all the base of so many meals!
Tomatoes as a base with celery and rosemary rather than onions and garlic, grilled halloumi instead of Tofu might be a good alternative for your meat free days?

Limited dairy... I cannot eat halloumi 🤢🤮! DH is just a fussy bugger so if I fancy tofu, he gets tofu!

I'm OK with FODMAPs so long as I don't go overboard. Just need to open a window,

If it’s not too late, then can I also suggest any recipe where you can substitute quorn mince for regular beef mince….we are all meat eaters but everyone is perfectly happy with swapping that out in bolognaise, chili etc and it doesn’t take any more effort, just a little spicing to make up for the lack of flavour. Plus, it’s super healthy and high in protein.

Those who have posted suggestions - are these all dishes you have served to meat eaters and they've said they didn't miss the meat? Or just ideas you think might work? The only suggestion I think would definitely work with my meat eaters is the cheese and onion pie (thank you!), something we'd often choose off a pub menu.

I've served all of mine to meat eaters but I've never had someone said "I didn't miss the meat" nor would I do so myself when I go out for a meal and I'm served vegetarian food. I'm just eating vegetarian that day and that's all it is.
If I think its delicious I will say so. Meat or no meat.

There is a big difference between. Making a dish that's meat substituted with like pulses or lentils And making a vegetarian dish.

Most omnivores will happily eat a vegetarian meal .

I just die a little bit when I read all these recipes. Do none of you have to follow a low Fodmap diet? Obviously not! DH can't have onions, garlic, anything beany or lentils, no peppers. Things like tofu and wuorn are revolting, sorry, they are.

So, sadly, we have meat/fish every night, sometimes in a variety of pasta dishes, or plain with salads or vegetables.

I'm not sure why you came onto a thread about vegetarian food and expected low fodmap, meals without legumes, onions & nightshades 🧐 throw in a dislike of tofu and quorm what on earth were you hoping to find here, in a thread about vegetarian food!?

A part of me dies when I see people slagging off tofu. I used to dislike it until I learnt how to treat it.

A curry but use paneer/Indian cottage cheese or quorn chicken pieces. You can cook chicken pieces of pre cooked prawns separately and add it to the meat eater portions but curry base stays same.
Mushroom Wellington.
Moussaka
Tofu or seitan stir fry - if you marinate and cook the tofu well it can taste chewy like meat
Linda McCartney or similar veggie sausage ratatouille.

Many moons ago I dated a vegetarian and as a staunch meat eater these were dishes in his repertoire I enjoyed - as I cared about losing protein. Nowadays back to the meat life I still have a day of veggie dinners and these are recipes DH (who can't live without meat) enjoys too.

I make wild mushroom risotto that starts out vegan (for brother) add cheese (for the vegetarians) then I serve it topped with wilted asparagus and steak strips, the vegan and 2 veggies only get the asparagus, dsd only gets meat as she hates asparagus and the rest of us get everything. Serve with home made focaccia which is a doddle or shop bought garlic bread

Another fully vegan and gf meal I make is coconut dal and aubergine pickle

Cook rice, I use brown basmati as tastes nuttier.

Meanwhile pan fry a chopped onion until softened, add sliced garlic, salt, a sliced chilli and finely chopped thumb of ginger then a tablespoons turmerics and the same of mixed curry powder. Fry one minute add 200g yellow lentils, mix with the pan contents, I one can coconut milk, same of boiling water, stock cube and cook until lentils are softened, you may need more water, but they vary how much depending on how long in the cupboard they have been.

Meanwhile chop into carrot baton sized pieces an aubergine, another thumb of ginger, 2 garlic gloves finely chopped, an onion chopped into petals.

Fry the aubergine until going golden. Meanwhile put 2 tablespoons cider vinegar in a bowl with 2 tsp sugar, 1 tsp mustard seeds, 1 tsp turmeric along with the garlic and ginger. Put the aubergine into the vinegar mixture when nearly cooked. Put the onion petals in the pan and fry until starting to soften adding all the aubergine mixture back into the pan at this point, cook until everything is cooked adding a little water if sticking (should be moist not sauce). Add chopped coriander to dishes to taste or curry leaves.

Because when I served it to extended family they thanked me for cooking with meat (they know I don’t eat meat) because they assumed something that rich must have meat in it.

Because when offered a portion of pork mince chilli or burnt aubergine chilli, my carnivorous offspring chose the latter.

Because it’s the chilli recipe of choice of two of my meat-eating friends.

It’s a good sturdy chilli recipe.

Nigella does a Mexican lasagne that's vegetarian that we love in our house. Other meals we like are a lentil shepards pie, vegetarian sausage casserole, carbonara made with mushrooms instead of bacon and homemade veggie burgers.

I did this recently and it went down an absolute storm! Though I did add a layer of mozzarella on top of the ricotta!

I find aubergine works really well as a meat substitute, something about the texture.

Tonight we had roast beetroot and leeks, bulghur wheat and rose petal harissa added later with veg stock and all cooked together in the oven. Feta and fresh coriander to finish, served with yoghurt. Lovely.
