Favourite vegetarian meals that are enjoyed by meat eaters too?

When I cater for a mix of guests, I usually make a meat and a veggie version of the same thing (eg curry, tagine, chilli,fajitas) or make a vegetarian main with plates of chicken, meat or fish to go with it for those that want it - for example mushroom risotto or a vegetable paella. Or something like tapas where there is a variety of dishes with plenty to suit everyone.
We are going to have people staying with us for a few days including a vegetarian. We'll be busy so would like to find some vegetarian dishes that the meat eaters would enjoy too without missing the meat or fish, so that I only have to make one dish. For example, the meat eaters in our family enjoy a lasagne I make with a filling of what is essentially home made ratatouille with a can of lentils mixed in.

Mainly looking for everyday family style meals but also something a bit more special for their last night, that the meat eaters will be enjoy without missing the meat.

Risotto, curry, chili, stir fry, soup with vegetarian ingrédients, aubergine Parmigiana, gratin, tortilla (Spanish).

Macaroni cheese is the only one that our meat eaters genuinely enjoy

We all love it, but it's a side dish rather than a main meal.

Those who have posted suggestions - are these all dishes you have served to meat eaters and they've said they didn't miss the meat? Or just ideas you think might work? The only suggestion I think would definitely work with my meat eaters is the cheese and onion pie (thank you!), something we'd often choose off a pub menu.

DH is a meat eater, and the dal and moussaka I posted are 2 of the meals he adds to our meal planner the most!

Baked camembert or cheese fondue.
Goats cheese and leek pasta (optional bacon bits)
Roasted butternut squash salad with parmesan (or veggie alternative) and pine nuts and balsamic vinegar (and optional prosciutto for the meat eaters)
Pasta with a tomato sauce with a tomato salsa and mozzarella and honey and pine nuts

Most of my veggie dishes are pasta I'm afraid.

Végétarian tarts, quiches, tortes, also brunch type dish with eggs, avocado, feta. Savoury crêpes with egg, cheese, mushroom.

We are a family of meat eaters but try to have at least a couple of meat free meals a week
I do
Spinach and ricotta cannoli
Paneer and spinach curry
Pea and asparagus risotto
Gochujang tofu rice bowls
Some sort of veggie fajita, enchilada or burrito
Used to do quorn chilli or bolognaise but the kids hate the texture of quorn mince.

Veggie chilli - lentils instead of mince. Dont scrimp on the spices.

toad in the hole with roasted root vegetables (and broccoli) instead of sausages.

butternut squash and sage risotto or pasta

spiced pumpkin soup (bbc good food recipe) sainsburys have a Bombay potato bread that goes really well with this.

I make the bbc burnt aubergine chilli (without chilli for kids) at family gathering. They are all big meat eaters and my sil says her kids don't ever eat beans. Guess what they wolfed it down we had to slow them done. One trick if you can is to grind your own cumin and coriander. Their are more potent. I also add mushrooms to it. A squeeze of lime. Yum

We had a big family dinner recently with a mix of veggies/ meat eaters/ fussy kids! I did aubergine parmigiana, a big bowl of pasta and homemade pesto and some roasted chicken legs- everyone just mix and matched.

Veggie paella always goes down well here too- you can just add chorizo for meat eaters.

Spaghetti bolognaise with quorn mince or lentils- I never bother making a meat version.

Sausage and mash or toad in the hole- super easy to do meat/veggie versions.

I've recently discovered a simple French tomato tart. Used ready made sainsbury's short crust pastry (make your own of you can.ita easy and will be worthwhile) layer with gruyere cheese, then best plum tomatoes you can get cut length wise in half
You can also slather dijon or whole grain mustard before the cheese. Bake n serve. Kids loved it.
My other go to is simple deal cos my 6 year old can eat Tarka dal every day

Feeding hardcore meat eaters definitely aubergine parmigiana and the burnt aubergine chill (it really is a fab recipe). Also a mattar paneer curry with dal.

Nigellas onion tart is absolutely delicious and so easy. I would have it in the special category if served with some lovely side salads

It's in how to be a domestic goddess but recipe not available on her website. I've linked below to a webpage that has it. It looks better than this when I make it 😂

As a committed meat eater there are some things I eat and enjoy regularly without thinking it lacking, but I mostly wouldn't think of them as main or special meals.
I think egg and plenty of cheese are probably key here for me. Enough cheese and you don't even miss the bacon 😅

Things i might make:
Vegetable soups. Often with a sandwich on the side. Tomato soup with a cheese toastie is amazing.....

Omelettes- (see above re cheese......)
Any combination of egg cheese and pastry...... eg quiche (broccoli and Stilton is good), caramelised onion tart, cheese and onion pasties/pies.

Vegetables curries, something with a good carby part to give it substance. Eg butternut squash, potato and spinach (saag aloo)
Samosas
Spring rolls,

Cauliflower cheese
Cheesy pasta bake
Butternut squash risotto (again, if no bacon, needs lots of cheese 😅)
Spinach and ricotta cannelloni.
Brushetta
A really good salad alongside anything, including a range of leaves and cooked vegetables, pine nuts, croutons, lots of varieties.

Stuffed peppers.
hallomi
Vegetable moussaka (just googled and found a Jamie oliver recipe very easily)
Baked potatoes with beans and cheese. Also a can of tuna is a very easy addition.

Honestly it probably depends on your meat eaters, I have family members who wouldn't be impressed with any 'special' meal being meat free, but I like variety

Halloumi fajitas

Pasta bake (full of onions, peppers, courgettes, mushrooms etc) topped with cheese

Egg or paneer curry with onion bhaji

Mixed bean veggie chilli

Stuffed peppers (rice, veg, feta)

Biryani with veggie curry sauce

The ones I've listed are things I've cooked for vegetarian guests (or with a mixed veggie/non-veggie group) or we enjoy at home as a family of meat eaters.

That wasn't my comment but we often have macaroni cheese with a roast gammon joint and either baked tomatoes or a side salad. I'd forgotten about that, this would work for an everyday meal during our guests' stay.
