Christmas day Brussel sprouts

Trying to move my family on from just boiled to something a bit more interesting.
Needs to be suitable for vegetarians.
Any ideas pls?

Cut in half, toss in olive oil and garlic salt, roast until crispy. Grate lemon zest over them before serving.

I will still try the meaty ones - just won't serve them that way in Christmas day. Thanks for all the replies.

If you roast them in avocado oil, that tastes very bacon-y without any pig related stuff. And you can add frozen or vacuum packed chestnuts.

I cut them in half, steam them for a couple of minutes then finish off in a pan with diced pancetta (obviously just omit if needs to be vegetarian), garlic, sage and chopped chestnuts. I try and get a slight char on them without burning. Can't go back to plain boiled sprouts now they just seem disappointing.
