Christmas day Brussel sprouts

Trying to move my family on from just boiled to something a bit more interesting.
Needs to be suitable for vegetarians.
Any ideas pls?

Boiled sprouts as nasty, these are fantastic - I make them all the time when sprouts are in season and everyone eats them.

Sliced thinly, mix with grated onion and carrot, plus any spice you like, and sauté in oil and butter. Yummy. And I hate sprouts normally.

I usually steam them for a few mins then stir fry them with pancetta, chestnuts and finely chopped sage.

I normally cut them in half, sauté them with garlic in a pan (mix of olive oil and butter) until slightly browned, then add a small amount of stock and cook uncovered until the liquid has evaporated ant the sprouts are cooked to your liking (I like them to still have a bit of bite). Add a squirt of honey at the end. Garlicky, sweet-and-salty taste sensation. 😀

I’ve started roasting mine. Throw them in with the carrots and parsnips for the last ten minutes. Delicious and easy.

to be honest this would be my tact on Christmas Day too. I would halve them and place them in a roasting dish cut side down for maximum contact and colour - drizzled in oil and seasoned with salt and pepper. There are already so many elements for a Christmas dinner that sautéing with multiple ingredients on the hob would not be my preference.

We cut them in half and roast in the oven with pancetta cubes. For about 25 mins. Perfect and easy.

Whereas I'm always looking for ways of shifting things from the oven to the hob because oven space is at a premium when cooking Christmas dinner. 🙂

interesting, for me the 25 minutes or so needed for sprouts to roast are perfect for when the meat is resting and I'm sorting gravy. Our family tradition is having pigs in blankets on Boxing Day not Christmas Day, so that probably helps us to have that little bit less competition for oven space. I just find things that need babysitting on the hob a PITA when I'm trying to pull everything together and prefer to prep ahead and shove in the oven!

Saute some bacon lardons, then add halved sprouts and just cover with stock plus a nob of butter. Simmer for 5 minutes or so, until the stock has reduced and is nice and shiny, but the sprouts still have a bit of bite. Add peeled chestnuts and heat through. Be generous with the freshly ground black pepper.

Roasted sprouts are lovely. These two recipes are equally delicious, and very festive. Even my sister, who hates the traditional boiled sprouts, loves these.

Yes- its very controversial recipe and delicious if you like both and don't turn the brussels into mush.

In halves, fried cut side down in butter and oil slowly until they caramelise. Takes a bit of patience not to burn them, or move them too soon. Bacon lardons, added about half way to slowly render and slivers of garlic crisped up. So good.
