For the remaining 7lbs of sausages:
SAUSAGE AND LENTIL CASSEROLE
450g (that would be 1lb!) sausages
1 large onion, chopped
1 clove garlic, crushed
1 large carrot, coarsely grated
175g (6oz) Puy lentils
Fresh thyme
large can chopped tomatoes
1pint hot beef stock
4 tbsps creme fraiche

Fry sausages til browned. Add and saute onion (shouldn't need oil) til softened and golden. Add garlic and carrot cook til a bit softened. Stir in lentils, thyme sprigs, toms, and stock. Bring to boil, reduce heat, simmer 30 mins. Add drop of water if too dry. Season to taste. Stir in creme fraiche when ready to serve.
CAMPFIRE CASSEROLE
1 tbsp sunflower oil
450g sausages
i large chopped onion
450g (1lb) potatoes, peeld and cut into @1" chunks
3 large carrots, chopped similr size to potatoes
1/2 pint chicken stock
can tomatoes
1 tbsp. worcestershire sauce
large can baked beans

Heat oil, brown sausages. Add onion, potatoes, carrots - cook til slightly softened. Add stock, toms, Worcs. sauce. Bring to boil, reduce heat, simmer til veg tender (1/2 an hour or so) Stir in beans, heat through and season. Serve in bowls with lots of crusty bread.
(for curried casseroles add 1 tsp curry powder with veg)
STOVED SAUSAGES AND SPUDS
2 onions, thickly sliced
450g sausages
750g (1lb 10oz) cooked potatoes (canned or leftovers)
1/2 pint hot chicken stock
lots of grated cheese

Fry onions and sausages in a little oil in heavy based frying pan or shallow cast iron dish for 4-5 mins til slightly browned. Use slotted spoon to remove 2tbsps of the fried onions. Put rest of sausage mixture to one side in a bowl. Slice potatoes and arrange half of them in bottom of pan/dish. Season and top with sausage and onion mixture. Pour on stock, top with layer of remaining potatoes (like a potato sandwich) Scatter with reserved onions and cheese.
Cover and cook gently for 15 mins, then grill for 5 mins til onions are crips and cheese bubbling.
Those are all adapted WW recipes (but obviously won't be with full fat sausages, oil and real cheese!) Haven't tried the third one but make the first two regularly and they are yummy. Am going to do third one as it sounds rather nice too.
