Filling, non-UPF, prepare ahead in bulk breakfast ideas for a teenager anyone?

A fussy autistic teenager to boot 😬

Ideally something I can batch make at the start of the week and reheat every morning. Sweet or savoury, but if savoury needs to also be vegetarian! Preferably something high protein too, but not just eggs every morning as a) expensive and b) he often has an egg-based evening meal.

Wondering about baked oats but he hates banana so need to find a decent no-banana recipe.

My DS1, also ASD, has porridge everyday but he started making himself aged about 11. This was a game changer as he wants it in a very particular way and he can do that himself and not get cross at me!
Is he able to prepare things himself?
He will also have yogurt and fruit with honey, a massive variety of egg-based stuff or Weetabix and a banana.

I make breakfasts for my grandson that freeze . I do apple flapjacks , and frittata with different fillings ( he likes baked beans particularly 😀) I freeze both wrapped into portion sizes , so they can be taken out the night before to defrost . I realise frittata is eggs though !

What about wraps? You can cook up some mince or halloumi or another protein and then add whatever he will eat veggie wise or salsa etc. Then make up the wrap, wrap it up tight, keep in fridge and then heat in microwave

Porridge often overlooked but very filling. Can add some chocolate or honey/golden syrup/berries for a change each day.

He had porridge every morning for about 8 years 😂 but then suddenly last year he announced he hates porridge because it's "too wet" and hasn't eaten it since!

He's reasonably capable at simple food prep but he is massively disorganised and getting ready in the morning is already a struggle so I don't want to add anything extra in. At the weekends he usually sorts himself out some toast or crumpets but because he mostly refuses to eat at school, I'd like him to have something really sustaining/healthy for breakfast on a school day!

Would overnight oats be too sloppy? My adult DS has ASD, he loves it, although I don’t think he would have liked it as a child.

Proper Greek yoghurt, defrosted frozen berries (blueberries or raspberries work best imo), chia seeds and any other seeds. Mix up the night before and leave in fridge overnight

Is there a particular reason to do in bulk? I think a lot of breakfast foods are better fresh and can be done quickly.

I do have a baked oat bar with whatever combo of dried fruit and nuts you like recipe if you like? They keep well and also freeze well?

Overnight oats are good too as you prep the night before. My rule of thumb is equal amount oats and milk then additional yogurt and whatever fruit and nuts you like. I add frozen berries and some nuts and seeds and give ds option to add additional fresh fruit in the morning.

Muffins tend not to be high protein but many keep or freeze well? I recommend finding versions using oats, bran, wholewheat flour etc as well as fruit and nuts to make them.more filling and more nutritious and more protein (amd recipes using yoghurt are good too). If he likes a slightly "spicey" flavour of mixed spice and cinnamon I have a fabulous spiced carrot recipe which are brilliant an they freeze very well and defrost super quick. Inam planning to make some this weekend in fact.

We do a lot of fresh waffles and pancakes but not high protein and don't keep well in my experience.

Ooooh this has given me an idea for breakfast burritos that I could wrap and refrigerate then heat up in the morning! Some scrambled egg, beans, veggie bacon pieces or sliced up sausages perhaps. If I just used one egg and split the scramble between the wraps it wouldn't be too egg-heavy.

If you have an airfryer, wrap in there is good. Inoccassionally do this for ds after school.

You can use pre-prepared fruit (i have mixed berries and mango in my freezer) and oats for long energy, milk, or juice for the liquid.

Overnight oats as well, prepare 5 portions on a Sunday, leave in the fridge.

Mornings are just such a struggle, his school taxi comes quite early and he needs constant prompting to stay on task with getting himself ready so being able to just throw a pre-prepared breakfast at him is really handy. He won't eat cereal or porridge 😬 and toast/crumpets just aren't sustaining enough because he doesn't really eat at school so a decent breakfast is super important.

Protein pancakes? I know protein powders can vary in processed-ness greatly, but brands like Bulk aren't toooo bad and there are banana free recipes. I make them at the weekend with Greek yoghurt and berries on top! The ones I make last about 4 days in the fridge, but are quick to make.

Pancake mix? Has egg in it and only keeps for two days but you’d make it three times in a week. Scale down how much you make each time, maybe?

If only he would eat peanut butter! He refuses all nut butters, I've tried them all to no avail.

Greek yoghurt is something he does quite like so I could try that more often, maybe I could teach him how to make homemade granola to go with it.

Chia seeds are texturally Right Out for him unfortunately. My DD used to love chia pudding and always had little jars of it on the go in the fridge but DS cannot deal with the texture at all.

My son loved these - I would bulk prep them and freeze them. He’d get out what he needed the night before to defrost.

Don't rule out 'non-breakfast' foods for breakfast. We have had success with homemade pizza slices in the morning. Can freeze and just reheat in oven in about 7/8 mins.

How about batch cooking some ‘McDonalds’ breakfast muffins - cook up bacon and make an omelette and cut into rounds the same size as a muffin (roll / barm whatever), fill the muffin with the bacon, round omelette, cheese slice (or grated cheese) and whatever sauce he likes. Wrap in cling film and then freeze. These can be reheated in the microwave straight from frozen.
