Filling, non-UPF, prepare ahead in bulk breakfast ideas for a teenager anyone?

A fussy autistic teenager to boot 😬

Ideally something I can batch make at the start of the week and reheat every morning. Sweet or savoury, but if savoury needs to also be vegetarian! Preferably something high protein too, but not just eggs every morning as a) expensive and b) he often has an egg-based evening meal.

Wondering about baked oats but he hates banana so need to find a decent no-banana recipe.

we do left over bakes (whatever is leftover from dinner mixed with egg and baked in muffin cases). they freeze well, but my teens just have them as snack for school/after school.

would a variation of that work?
like a bread&butter pudding in a snack format?

Mine love baked oats. They prefer them cold, so I do a big one and they just help themselves. There's so many recipes online for different flavours and you can add things in for extra protein or blend it to change the texture.

My other one is breakfast burrito but I see you've already thought of those.

This sounds weird, but they are so, so good...pitta breads filled with cheese and then microwaved for a minute or so until the cheese melts but they're still soft.
Essentially, split the pitta bread, butter both sides, fill with sliced cheese, close up again like a sandwich and microwave. You could do it/ them in advance and leave in the fridge ready for microwaving in the morning.

Actually, a minute might be too long in the microwave. The cheese needs to be just melted but don't leave for too long so the bread doesn't go hard!

He had porridge every morning for about 8 years 😂 but then suddenly last year he announced he hates porridge because it's "too wet" and hasn't eaten it since!

He's reasonably capable at simple food prep but he is massively disorganised and getting ready in the morning is already a struggle so I don't want to add anything extra in. At the weekends he usually sorts himself out some toast or crumpets but because he mostly refuses to eat at school, I'd like him to have something really sustaining/healthy for breakfast on a school day!

Oh totally get this! DS wouldn't eat porridge for years as too weird but now he eats bowls and bowls.

I noticed that he isn't against oats as such. He's bored of porridge because of the texture. They have 'trail mix' in America. Perhaps you could toast the oats or buy some toasted oat/wheat flakes and store in one jar. In some other jars have nut/seeds and dried fruit like dates/raisins/figs/pineapple. Then each morning encourage him to freestyle his own trail mix by using different combos.

Well, I made a tray of baked oats on Sunday evening and he absolutely loved them. Said it was like having cake for breakfast 😂

I kind of made the recipe/proportions up but it was basically porridge oats, ground almonds, grated apples, greek yoghurt, one egg, cinnamon, and a small amount of maple syrup. Oh and a handful of dried cranberries stirred in at the end. Chucked in the food processor, then poured into a greased tin and baked until golden.

He's currently eating a warmed up slice with more greek yoghurt on the side. Hurrah!

We've agreed to test out breakfast burritos next week, I forgot he loves mushrooms now (can't keep up with what he does and doesnt like from one week to the next!) so we are going to use mushrooms, scrambled egg, some veggie bacon lardons, and beans.

We cant have eggs or oats as we have allergies so DC eat a lot of hash browns and mexican style food for breakfasts.

Good news in your latest report!
Bubble and squeak is not exactly pre-prepared, but does use pre-cooked potatoes and cabbage, onion (etc). With a bit of grated cheese, or baked beans, or vegan bacon or Greek yoghurt on top should be quite sustaining.
Mushrooms, fried potatoes and baked beans are tasty, though not 'pre-prepared'.
Mushroom/onion/feta filled pancakes can be pre-cooked then re-heated. Ditto pancakes filled with roast veg and cheddar etc etc.
Blueberry or raspberry muffins with yoghurt? Made with ground or chopped almonds would add protein.
As others have said, nice toast (good bread with seeds if he likes them) plus any kind of nut butter (almond is delicious), plus fresh fruit.

Pitta bread, split in half, butter both sides, add cheese ( so like a sandwich). Microwave for 30 seconds to a minute (obviously depending on the microwave power) so the cheese is melted but the pitta bread is still soft). Probably needs a knife and fork to eat but immensely good imho!

Cream cheese bagel would be quick, maybe with smoked salmon or bacon, or with marmite.

English muffins, one half peanut butter ( I know but smother it in honey and maybe some sultanas) and other half butter and Vegemite ( sorry Marmite). Glass of milk with MILO and some berries or grapes or a little apple to eat int the car or bus?
Otherwise a whole heap of that vanilla flavoured Greek yoghurt topped with loads of berries.
