Please can I have ideas for lunches which are super quick and easy and maybe even a bit nutritious.

I love making evening meals but for some reason I absolutely can't be bothered when it comes to lunch! Help! 😁

I just make extra of my meal the night before and take the leftovers in to reheat

Soup. I bought a soup maker from FB marketplace for £10. Makes delicious soup in 20 mins using any veg from the fridge or freezer. I'm low carb at the moment and eat with 2 chicken thighs, different flavouring everyday. Finish with fruit if I'm still hungry.

Today was green veg soup with double smoke bbq chicken. I'm thinking garlic butter tomorrow.

I was going to say the same thing- my soup maker is the best when I'm working at home. I run downstairs between calls and throw in whatever veg is in the fridge - this week I've used kale, spinach, some cooked beetroot, carrots, onions, broccoli and parsnips. Add some stilton/boursin if we have any, water and bouillon powder, come back in an hour to a healthy lunch.

I've been known to make Brussels sprout soup but it doesn't leave toy with many friends... 🤣

Possibly not the healthiest option but I just wanged a Pukka pie and a couple of big handfuls of tenderstem broccoli in the air fryer for 15 mins. Good lazy wfh lunch but not very office friendly.

Office days I tend to make myself a pack up like DC's the night before when I'm doing theirs.

Good ideas, thank you! I think it might be that I'm weirdly picky about cold food but can't be bothered to cook or do much prep. I'm a mix of WFH and office. Office is ok because I prep the night before. If I'm WFH I just think 'meh will sort it tomorrow - no need to prep' 🤭

If I'm honest, lunch feels like it just gets in the way of my day a bit. Bit the problem is that I snack on all the wrong stuff if I skip it all together.

To the PP who asked - I'm 32.
