Lazy lunch ideas

Please can I have ideas for lunches which are super quick and easy and maybe even a bit nutritious.

I love making evening meals but for some reason I absolutely can't be bothered when it comes to lunch! Help! 😁

Veggie omelette

Tbh anything healthy you've got to be willing to do a bit of prepping, but I tend to make something that will do for a few days. In the summer I do some nice chopped salads with all sorts in them so it takes me 20 mins to do but I've then got it in a container in the fridge for a few days (no leaves in it so doesn't go soggy)

I sometimes do lazy egg fried rice - some frozen chopped mixed veg, cook that with garlic powder and chilli flakes, packet of microwave rice and then scramble some egg into it. Soy sauce on top. Done.

Today I had - bit of pre-made Spanish omelette, few olives&feta cubes, half an avocado, some cucumber, spoon of coleslaw. Cheers to Ocado 😄

Other than that for me it’s soup or eggs on toast.

Lazy days I will literally chop up anything in the fridge that I can eat without any prep. Peppers, cucumber, tomatoes, broccoli, cheese, avocado etc and just eat while I’m working.
Usually though I’ll have a bit more time to put some effort in, might make a chicken Caesar (takes about 10 minutes while the chicken is cooking to make the dressing, prep the salad and clear up.
What I really need though is my dd to come back from uni, she’s the absolute best lunch maker!

Soup. I bought a soup maker from FB marketplace for £10. Makes delicious soup in 20 mins using any veg from the fridge or freezer. I'm low carb at the moment and eat with 2 chicken thighs, different flavouring everyday. Finish with fruit if I'm still hungry.

Today was green veg soup with double smoke bbq chicken. I'm thinking garlic butter tomorrow.

Houmous with pitta bread, carrots, peppers, cucumber

Cold meats, or cheese, tuna, hard boiled egg with ready made salad

Deli mix from M&S with salad

Tuna potato salad

An avocado ( very filling) with salad and nuts

Crackers with cheese, ham, cream cheese, avocado or any combination of the above.

Currently obsessed with a salad - squash, chicken, carrots in an airfryer, kale, feta or goats cheese, walnuts & apricots all smothered in homemade honey/mustard dressing 😋 About 10 mins of work all in and it's delicious.

Soups - I like roasting extra veggies when I'm making dinner and then blitzing into a soup. So I'll do double broccoli/cauliflower to go with dinner, and then wack half in the food processor with a handful of cheddar to make soup for the following day. I hate leftovers so this helps balance it out! I like doing corn/sour cream, carrots with a pouch of those precooked lentils, even thinning out chilli to make a Mexican style soup.

Depending on how much you want to spend, I normally have a bunch of daal/lentil pouches in the cupboard to heat up with rice and whatever salad veg I have in the fridge. Not the cheapest options but a lifesaver and SO fast.

Don't forget the basics. Nothing wrong with beans/eggs/cheese on toast, pittas with humus + veggies, sandwiches...

I take lunch to work. Every night I get out my Tupperware and chop lots of crunchy salad items then add a protein( boiled egg/ tuna/butter beans/ prawns) then add a dressing of something like a spoon of hummus or Greek yoghurt with lemon juice. Season well and add a squirt of hot sauce or a few olives and a sprinkle of seeds or nuts. It’s easy, flexible and nutritious.

Are you WFH and cooking in your lunch break, or taking a meal to an office/place to reheat there?
Batch cook lasagna/pasta bake/cottage pie/curry/fish pie/stew into 1 person servings. Get out the freezer the night before, defrost in the fridge. Re-heat and serve with a salad or bread.

DH and I both WFH, and we often make a pasta for lunch. You could prep veg etc in the morning to save time. Puttanesca, pasta alla norma, pasta con sarde, carbonara or a carbonara with the addition of peas/mushrooms or whatever else I have (sorry any Italians reading this!)

Sounds weird but I love a toasted roll/bap whatever folk call it with a mix of puree and Tommy K. Loads of oregano mixed in and spread on the toasted roll. Layer cheese and top with sliced tomato and black pepper. Then grill. Gonna make this tomorrow now you've set me off.

Just chop up fruits and veg with some form of cheese like feta or mozzarella and some greenery like rocket. Add olive oil and salt. Takes under 5 mins and will be delicious and filling

Nest of noodles, garlic ginger paste, miso and stock. Whatever else I have that I can chuck in, usually spring onion, handful of spinach, leftover chicken. I just put all the ingredients in a bowl with a lid, pour over boiling water and leave it 5 minutes. Sometimes I'll add chilli sauce or sesame oil.
