I have one recipe using a Mexican rice packet (chicken, peppers, rice, cream cheese) and would like some more. It’s for quick mid week meals with not too much prep. It’s to stop us having too much pasta!

Sticky rice, and then add salmon or chicken on a teriyaki sauce, and either broccoli or baby sweetcorn or whatever you fancy.

I have loads of different bags of frozen veg so for a quick mid week meal will just stir fry whatever veg I fancy in a pan (straight from frozen), with chicken/prawns/chickpeas/whatever I have really, add some kind of spice mix then stir in the rice at the end

Do you add just the cream cheese or do you make it a bit thinner with milk or some other liquid?

I do add a bit of water to make it a bit more saucy.

I do a sort of kedgeree.

I fry an onion, and add some curry powder and chilli, add a packet of plain white rice and a dash of water, then throw in some frozen peas. I flake in some pre cooked salmon and a couple of chopped hard boiled eggs

Stuffed peppers. Halve, rub skin with oil, stuff with rice, trickle in about a dessertspoon of water, top with grated cheese, about 20- 30 mins in the oven till peppers are cooked. Great with the Mexican or vegetable rice packets.

Lunch size - half pack of flavoured rice in bowl, make a well in it, crack in an egg and nuke for just over a minute. Safety - prick the membrane on the yolk first and do not overcook. Once cooked stir it up and add soy or other sauce. You can add finely chopped veggies before cooking too.

They're really handy if you want to stuff something with a fancy rice but can't be bothered to prep the rice and veg. A boon away in the campervan.

To be fair...& I know it's not the question you asked...

Just stick 2 mugs of water on to boil, then once it's simmering, pour in a mug of rice & a sprinkle of salt.

Leave it to simmer for 7 minutes, then take off the heat, lid still on, & leave for at least another 7 minutes.

Use your cooked rice as you would ready made. If you have too much, freeze the surplus in single portions which can be microwaved.

Those pouches of rice are greasy, expensive & crap.

I'm all for convenience, but rice in pouches is an odd one!

Fry some chicken, onions and mushrooms with a spoonful of curry paste, add the rice and a handful of frozen peas. It's my go to when I've left over roast chicken.

For a really quick meal I make a lot, stir fry mushroom, pepper and onions along with any other veg you have that needs using up, add packet rice and stir in, then use a tbsp or more (to taste) of M&S Nasi Goreng cooking paste (in a jar) and then either scramble in two eggs, fry an egg for the top of each bowl or make a quick omelette and cut it into strips for the top of each bowl. You can add a garnish on top of whatever you fancy in addition to the eggs. Peanuts, crispy onions, broken up seaweed crackers, spring onions, chopped chillis.

Yes I know they are crap but means a one pot meal fast on a busy evening sometime.

If you have small amounts of chilli or bolognese leftovers, add peppers and frozen peas and heat up. Add the rice and roll up in wraps to make burritos. Not authentic but delicious!

Boil your own rice as pp. Plain white rice is cheap but you can use it as a base for tasty recipes.

Tesco Microwave Long Grain Rice 250G - Tesco Groceries
Grower Harvest Long Grain Rice 1Kg - Tesco Groceries

Microwave method: 1 cup rice 2 cups boiling water. Microwave for a few mins, then leave to stand for a few mins with a lid on the container.

Pouch rice : 31p per serving; Rice: 4p

I use a saucepan. 1 part rice, 2 parts cold water. Bring to the boil, Turn heat off.
Prepare other stuff. Eat.

I really like those Jamie Oliver or Merchant Gourmet pouches. They are almost a meal on their own, with various vegetables.

I'm a full time working, single mum or 3. Reaching for those packets has stopped me wasting loads on take out before.

@coodawoodashooda , I can see that they are convenient.
@CorvusPurpureus and I were only trying to get across that for what they are, you can make your own for a fraction of the cost, and with very little effort.

A bag of mixed veg in the freezer, and a bag of rice and you can make a carb base in a few minutes. Probably as quick as ordering a takeaway or heating pouches.

You can add something to it to make it more interesting.

Nothing wrong with having some basic store items as backup, and a takeaway once in a blue moon is a treat.

I used to do this except with a tin of tuna. And then throw cheese over it!

Gorgeous.

I dont really eat rice these days though

Pouches of rice are much more expensive, but for one person, easier and quicker than trying to cook up a portion of rice.

They're not greasy or crap. What does this mean? They're just rice. I use a lot of oil when I cook my own rice so Im used to oily rice, its not greasy though

The very easiest quickest meal (though not gourmet!) is a can of mixed beans in mild chilli sauce heated on the hob, and a pack of rice. About 5 minutes all in. Serve with wraps or taco shells (or even some tortilla chips) along with a simple salad and ready grated cheese. It was my DD’s favourite meal for a long time.

I use a brown rice and quinoa one. Fry some chorizo, add a tin of tomatoes, some paprika and chilli, simmer for a bit, then add prawns. Lastly add the rice packet and some water, simmer for 5 mins. Serve with any veg

Steam salmon in microwave under plastic lid, with a bit of lemon, garlic powder and olive oil , for about 4 mins.
Then heat the rice, add that with chopped spring onions and serve with the salmon and it's juices.
I like steamed broccoli on the side as well. Or just some salad leaves.
