What to do with minute steak

Tipster100 · 05/09/2024 11:17

I bought a load of minute steak from Costco and it's not all that nice but I don't want to waste it. Am thinking of making a pie with it but worried - do you think it will get dried out? What else could I use it for? Stir fry? TIA!

Yes stir fry - it's really not great for anything else IME

LaPalmaLlama · 05/09/2024 11:21

If you’ve got a mincer you could just grind it all up and make a Chilli/ bolognaise. Won’t be the best one ever but it’ll taste fine.

AzureSheep · 05/09/2024 11:23

Slow cook it with some steak mince, tinned tomatoes, kidney beans, and whatever seasoning you’d put in a chilli. Should be able to shred it once it’s cooked.

longdistanceclaraclara · 05/09/2024 11:25

It's called minute steak for a reason - don't slow cook it!

I'd flash fry it and make steak sandwiches.

DelilahBucket · 05/09/2024 11:25

It either needs cooking quick and high heat or slow and low heat. Stir fries or fancy sandwiches (like Philly cheese steak) or stew.

I'm guessing that's where I've been going wrong 🤣 I thought I'd do steak and chips. It pretty much all went to the dog despite cooking it for about a minute!

Cut it across the grain and then velvet it in baking powder. This will tenderise it. Flash fry with some onions and mustard and have it in a ciabatta

SpaceOP · 05/09/2024 11:26

No, please do not slow cook it or use it in a pie etc. the only way it is edible is cooked extremely hard and extremely fast, preferably still slightly pink. Stiry fry is great. or use it to make steak sandwiches/baguettes - coat it in oil, season generously (add some spice if you like it but I don't usually bother). Frying pan to heat of the sun. Slap steak in. turn after about 45 seconds (maybe try one first and see if it needs even as long as that) Remove after another 45 seconds, leave to rest for a 2-3 minutes, then slice and put on your sandwich/baguette (or do something like a fajita mix and serve the steak on the side for fajitas).

I don't have a mincer but I've got a great food processor. Could try that.

So not such a great idea?! Ok. Going off slow cook. Presume that might make it dry as so lean.

Oh that's interesting. I didn't know that was a way of tenderizing.

I'm concerned if I do sandwiches it will be as bad as when I cooked it for steak and chips. I tried to do it hard and fast but the meat itself tasted bad. Maybe I'll give it a go for weekend sandwiches at lunch so not such a big deal if horrible.

SpaceOP · 05/09/2024 11:33

Did you try to make them for steak sandwiches in lunch box? No, also, terible idea, sorrty. It has to be cooked hard and fast, and eaten promptly. Minute steaks are not the kind of food that can be kept. You cook, you eat.

MrsJackRackam · 05/09/2024 11:33

Remember and wash off the baking powder before cooking 😂

Chinese-style crispy beef (with or without chilli) is perfect for minute steak and works in a frying pan or air fryer. It's a really flexible recipe which will work with whatever veg you have in the fridge. www.bbcgoodfood.com/recipes/air-fryer-crispy-chilli-beef

Oh yes. Great shout. Do this. Ignore my steak sandwich idea.

minipie · 05/09/2024 11:46

Agree about very fast cooking. Marinading it beforehand with some kind of acid in the marinade (vinegar, lemon juice etc) will also help tenderise it.

TheFlis · 05/09/2024 11:49

It works well in fajitas when thinly sliced.

Yep this sounds like a much better idea than my slow cooker chilli was

This is a good reminder! I could well have forgotten this with my bad brain.

Thank you so much! I have an air fryer so will take a look.

Slow cook as steaks in Gordon Ramsay’s beef in honey and soy.

For some reason have only ever made chicken fajitas. Nice way to change things up.

My go-to Chiquitos order back in the day was always half chicken, half steak! 😁
