Recipes that don't require an oven

Littleguggi · 04/09/2024 18:04

My oven has broke and I am looking for some tasty dinner recipes that don't require oven use. The only other appliances I have are a gas hob and microwave. Anything other than pasta or stir-fries please. Inspire me..

Jacket potatoes
stew on the hob (cook on low for hours)

Everything apart from the shepherds pie sounds great, I like a crispy potato topping!

Also with jacket potato I only like them oven baked with a crispy skin unless there's a way to achieve this in the microwave?

Tonight we are having pork tenderloin escalopes with crushed new potatoes, broccoli and peas with an apple and thyme sauce- all done on the hob and flattening the escalopes means they cook in minutes.

Roast chicken. Cut all along one side of the spine, then thump it one so that it opens out. Season it well. Put in a wok with a lid on a lowish heat and flip after about 25 minutes (when you can smell roast chicken) so that the skin crisps off. Also makes brilliant bones for stock/soup afterwards - just add water.

This sounds amazing, where do you buy pork tenderloin from? Do supermarkets stock them or butchers only?

Can you buy or borrow an air fryer until the oven is fixed? You could still do things like shepherds pie (might have to do a couple of portions at a time depending on size) and jacket potatoes (cook them in the microwave then into the air fryer to crisp up).

LlamaNoDrama · 04/09/2024 18:38

Curry
One pot dishes (risottos, rice dishes with chicken and flavourings etc)
Various pasta and sauce

Littleguggi · 04/09/2024 18:41

How did I forget about curries and risottos, thank you to whoever suggested these!

I worry that if I borrow an air fryer, I'll want one! Managed to resist getting one so far!

I love this

https://www.bbc.co.uk/food/recipes/tuscan_chicken_85727

Very adaptable, can vary the veg and/or meat to what's about to go off available, just one pot + one for pasta/rice/spuds.

Amazing thank you, I have used the pinch of nom recipe in the past but this looks great.

"I worry that if I borrow an air fryer, I'll want one! Managed to resist getting one so far!"

Resistance is useless ! I've had mine over 8 years, & would replace it immediately if if it died. There's only 2 of us usually, & I normally use my oven once a week for a full roast dinner.

sillysarnies · 04/09/2024 18:55

Schwarma Chicken and Rice. Really easy and gorgeous!

Boil rice. Either boil in the bag (I do 2 bags) or, allowing enough for all of you, measure out and rinse over. I cook 2 cups basmati rice to 4 cups water for 5 of us and boil 6 mins lid off then 6 mins lid on. Season with Schwarma spice, turmeric and salt. Stir.

Drop of sunflower oil and dice and fry over a large onion. Add diced chicken breasts - I allow 4 for the 5 of us and there's normally some leftover for lunch tomorrow. Season with Schwarma spice, turmeric and salt.

Drain rice and add to chicken. Mix. Enjoy! Add boiled greens if you like - peas or broccoli work well.

Littleguggi · 04/09/2024 18:57

I agree resistance is useless, however in my case I cook for 4 usually enough to last a second day so I know the air fryer wouldn't be big enough. Plus I have a habit of buying appliances and then letting them gather dust like my slow cooker and stand mixer to name a few!

Omelette. Chilli. Curry. Beans on toast. Mash. Hob based tagine. Halloumi salad. Tortillas.

AdaColeman · 04/09/2024 19:08

Now is the time to get your slow cooker out of the cupboard and make it do some work! Then you will have a huge range of stews, tagines, curries etc available to you.

Fish cooks well in the microwave, add things like chopped tomatoes, peppers, olives, ginger, spring onions etc to help ring the flavour changes.

worriedgal · 04/09/2024 19:14

@Littleguggi
I got tonight's from marks and Spencer's .

BobbyBiscuits · 04/09/2024 20:34

Lentil and beetroot salad. Boil green lentils in the microwave or buy the tinned ones, add packaged beetroot, spring onions and lemon juice and olive oil. That's really nice with feta, or grilled halloumi, and green salad.
Also napolina do a tinned bean salad that's pretty good. I rinse it then add chopped peppers, spring onions and a bit of lemon and olive oil. It's nice with tuna, salmon or just salad leaves.
