Hello

I’d like to start eating more grains and pulses, either cold salads or warm as a side dish. Does anyone have any great tried and tested recipes to share (ideally with an online link but not necessary)

I have one chickpea salad that I do a lot but would love some similar ideas.

Couscous/tabbouleh type recipes also very welcome

I love This Recipe
Quinoa Salad with Roasted Vegetables and Lemon-Herb Dressing
Ingredients:

  1. 1 cup quinoa, rinsed
  2. 2 cups vegetable broth
  3. 1 tablespoon olive oil
  4. 1 medium sweet potato, peeled and diced
  5. 1 red bell pepper, chopped
  6. 1 zucchini, diced
  7. 1/2 cup cherry tomatoes, halved
  8. 1/4 cup chopped fresh parsley
  9. 1/4 cup chopped fresh basil
  10. Juice of 1 lemon
  11. 2 tablespoons olive oil
  12. Salt and pepper to taste
Instructions:
  1. Cook the quinoa: In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is cooked through. Fluff with a fork and set aside to cool.
  2. Roast the vegetables: Preheat oven to 400°F (200°C). Toss the sweet potato, bell pepper, zucchini, and tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. Make the dressing: In a small bowl, whisk together the lemon juice, olive oil, parsley, basil, salt, and pepper.
  4. Assemble the salad: In a large bowl, combine the cooked quinoa, roasted vegetables, and dressing. Toss gently to combine.
  5. Serve: Taste and adjust seasoning as needed. Serve warm or chilled.
Tips:
  1. Feel free to add other roasted vegetables like broccoli, asparagus, or eggplant.
  2. For a heartier salad, add grilled chicken or tofu.
  3. Make it a complete meal by serving with a side of hummus or yogurt.
  4. You can make this salad ahead of time and store it in the refrigerator for up to 3 days.

Thanks! The satay chickpeas does sound good… love satay flavours. And the tomatoey ones would go down well with the kids. Beetroot and mackerel looks good too, and the lentil halloumi one.

Think I need to get into the habit of thinking of pulses rather than pasta/potatoes/rice

Any freekeh ideas? I have a neglected bag of it, testament to good intentions…

I sound like a massive wanker but I have started buying the Bold Bean queen chickpeas (that are like £4 for a BIG jar) and they are SOOO nice compared to tinned so if they're the 'main ingredient' in a cold thing I do go for those.

Yess! I have been looking at red lentil dhal recipes for ages wondering which to try. That’s straight on my list, thanks.

And the salmon & chickpeas, and the herby lentils to go with lamb, and the kosheri.

But surely dahl is lentils. but not all lentils are dahl.

Lots of countries & cultures use them - French puy lentils would be ruined by adding Indian spices.

Somebody recommended this recipe here. I made it last week and we enjoyed it. I used farro as the grain because I discovered a bag in the cupboard. I have no idea why I bought it originally! (Not uncommon occurrence.)

I meant to have the leftovers with a not-too-hard-boiled egg but forgot. I think that would go well. It doesn't need a lot of feta as there is plenty of flavour there already. (The leftovers were good and kept well in the fridge for a couple of days.)

Pearl barley seems to have gone out of fashion - if it was ever in !

This "https://www.bbc.co.uk/food/recipes/pearl_barley_with_21752" with mince is a good, easy, basic recipe, but I do tweak it with lots of herbs & spices according to what meat I'm using.

My family like the Rukmini Iyer roasting tin books . The lentil Dahl is very good https://thehappyfoodie.co.uk/recipes/rukmini-iyers-lime-and-coconut-dal/
and there are a couple of nice pearl barley risottos

Ive got in the habit of getting recipe books from the library and just copying out those I fancy . Most can be condensed down to a few lines if you cook a far bit already

This looks very nice, I wonder if I could replace the cranberries with something else… Roast shallots maybe or pomegranate seeds?

dontliketheheat I did actually do exactly that with a Rukmini Iyer book once and took some photos of a few recipes! I had forgotten. Now just need to find those photos… Thanks
