The perfect roast chicken dinner

I've been craving a proper roast dinner (it's the start of winter here in Oz) and I think chicken is the go. Much cheaper than the rest & such a fabulous meal.

To me a proper roast chicken dinner should have:

Homemade gravy from the chicken juices
Roast potatoes and pumpkin
Sage & onion stuffing, both up the bum and as stuffing balls roasted with the veggies
Peas

Parsnips are good but haven't seen a decent one in the shops yet.

What do you all serve with a roast chook?

Carrots, broccoli, cauli, bread sauce, cranberry sauce and Yorkshire puds.

Moveoverdarlin · 08/06/2024 07:58

Broccoli and carrots. Yours sounds nice but I would swerve the pumpkin.

Bringthejury1 · 08/06/2024 08:09

The only things I'd add to that are cauliflower cheese, yorkies and Cranberry sauce...yours sounds delicious!

BitOutOfPractice · 08/06/2024 08:11

Cauliflower cheese!

BitOutOfPractice · 08/06/2024 08:11

Redcurrant jelly

Dustyblue · 08/06/2024 08:14

@DustyLee123 I like your user name! Forgot about bread sauce, my Dad used to make that. Is that the one where you cook an onion studded with cloves in milk first?

But I love roasted pumpkin, more than roasted carrots even.

Yes to broccoli with the peas. Might even lash out and get broccolini, think it's called tender-stem in the UK. Mmmm.

Peas have no place in a roast dinner. You forgot roast parsnips! And, though not traditional, a Yorkshire pudding is welcome with a roast regardless of the meat in my house.

Dustyblue · 08/06/2024 08:57

See, this is what comes from being raised in the colonies! We bugger everything up apparently!

To me, Yorkshire pudding is served with Roast Beef only. It's almost essential. And horseradish sauce.

Bread sauce goes with chicken. Nothing else. Peas go with roast chicken- don't ask me why, it just IS.

Roast parsnips are divine but can't find any in the shops despite it being winter.

Omg cauliflower cheese is awesome- I would eat that with any roast dinner. And they're cheap atm 😀

Pigs in blankets! I always get extra at Christmas and pop in freezer for random roast chicken dinners ( and make an awesome addition to leftover chicken sandwiches)

DogInATent · 08/06/2024 09:13

Stuffing in the cavity? - how long does that take to cook?

DoublePeonies · 08/06/2024 09:14

Pigs in blankets (or sausage meat stuffing in addition the the sage and onion).
Yorkshire pudding
Id switch the pumpkin for carrot, but would accept that perhaps you get better pumpkin in Oz, so that might he ok.

Same time as the chook itself depending on weight.

For a turkey, I do the stuffing under the skin on the breast. It's fiddly but with a big bird it works well.

But I like stuffing rolled into balls as well, they get crispy along with the veg.

Roast potatoes (though we like roast new potatoes with garlic & herbs)
Parsnips
Something green - cabbage, cavolo nero, broccoli, beans. Maybe two of these
Maybe carrots

We don’t do stuffing except at Christmas. Or cauliflower cheese … I’m always disappointed it’s not macaroni cheese.

ilovepixie · 08/06/2024 10:02

Roast chicken
Stuffing
Cocktail sausages
Mash potato
Roast potato
Yorkshire puddings
Cauliflower cheese
Carrots
Gravy

Pigs in blankets sound sooo good! Am thinking that MUST be a UK thing though? I've never seen them served with an Aussie roast dinner. What a shame!

No to the pumpkin! Proper sausage meat stuffing, real gravy, cauliflower cheese and more 🥔 than you think you need.

Dustyblue · 08/06/2024 10:36

Ok, now I want cauliflower cheese so badly! And I have some really nice, sharp cheddar in the fridge.

By the way, how big are your ovens? If I made all of these I'd need to do it in stages. That is:

One tray with chicken, potatoes, pumpkin BECAUSE I LIKE IT, maybe parsnips, carrots & stuffing balls.

One dish of cauliflower cheese. Oh, the prep involved! White sauce etc.

Greens on the stove. Pigs in blankets need to be baked, yes?

I forgot one- corn fritters! How did I forget corn fritters?

This could be epic, might have to invite people!

Bacon on top, loads of homemade bread sauce, roast potatoes, gravy, roast carrots and steamed cabbage. I'm so hungry now!

Defiantlynot41 · 08/06/2024 10:51

@Dustyblue yes, almost certainly a UK thing, I've never seen them in Australia or US (but happy to stand corrected) but easy to replicate if you can get decent small sausages and streaky bacon? So good with roast chicken or turkey, adds a bit of fatty, salty yumminess to what can be a dry meat

The perfect roast chicken dinner
Boater · 08/06/2024 10:55

Corn fritters? That’s not a roast dinner dish.

Yorkies technically are a Beef side but I make them with every roast because they’re lovely!

Peas are non negotiable, carrots, parsnips, sprouts, gravy and stuffing

Roast potatoes obviously.

Wouldn’t do pigs in blankets except at Christmas

AtleastitsnotMonday · 08/06/2024 11:27

Leeks! I love leeks with a roast. And absolutely agree with the breads sauce.

zaxxon · 08/06/2024 11:49

I don't get the cauliflower cheese thing. Isn't that a dinner in its own right? And roast chicken & veg are pretty filling on their own. You'd be cooking two dinners.

IWantToBeASleepingCat · 08/06/2024 11:53

Love a roast chicken dinner.. but l don't stuff it.
Roast potatoes and mash.
Cauliflower cheese.
Glazed carrots.
Leeks.
Stuffing.
Gravy made with juices.
Home made Yorkshire puddings. ( I'm a Yorkshire lass).
Going to make one in week ( always out on a Sunday) . Only me so will make two plates and freeze one.
Enjoy.

NeverWheesht · 08/06/2024 11:55

Yorkies on all roasts.

With extra yorkies for later to dip in honey and jam.
