How to make salmon more 'interesting'

My youngest is picky with fish and only seems to like cod in breadcrumbs or salmon (fillets fried or baked in oven). Other kids complain that it's boring. Any suggestions for making it taste a bit more interesting. No-one here likes dill btw. Or tomato-ey type sauces. 🙄

My family like salmon and broccoli pasta - I cook the broccoli in the pasta for the last few mins. For the sauce fry leek and grated courgette, add some either pesto or herbs and a bit of creme fraiche. Then add sliced up salmon to cook, add pasta and broccoli with a splash of pasta water and serve.

Do they like soy sauce?
My DD loves salmon with soy, ginger and garlic.
Salmon takes strong flavours really well. Rubs/marinades and baked in foil.
Cajun, BBQ also good

It’s very nice with miso - mix white miso with bit of soy and lime, spread on the top of salmon fillet and grill it

Salmon en croute is lovely and easy if using pre made puff pastry.

Do you spoon the soy sauce/miso over the fish before baking, or soak it in it? I know nothing about marinades, I am pretty clueless, don't even eat meat myself.

With a vinaigrette/caper sauce (salsa Verde ?) is nice but bbq'd or smoked is nice too.

Salmon pan fried with broccoli, red pepper, spring onion, ginger, soy sauce, sesame seeds and honey.

Couscous with Mediterranean vegetables and lemon seasoning and chopped parsley baked with side of salmon on top with slices of lemon

Fish curry (I often use fish pie mixed fish with onions, peppers, korma paste or medium curry powder and coconut milk)

My DS loves salmon baked with a coating of sweet chilli sauce and chopped cashew nuts.

Marinate in olive oil, lemon juice and some crushed garlic. For a more Asian twist you can also add some chopped ginger and soy sauce. Wrap the fish in foil, with the marinade, and leave for 20-30 minutes, then bake in the oven. If using fillets, around 15-20 minutes will be enough to cook it.

Add a squeeze of lemon juice over it, then add dried breadcrumbs and a sprinking of herbs and bake.

Spread pesto over and sprinkle with Parmesan before baking

We love salmon with green pesto - just spoon it on wrap in foil and bake in oven. Delicious with new potatoes and green beans.

I put some honey and soy in a tinfoil parcel with salmon and cook it in the oven or air fryer. Serve with rice and veg.

Tarragon is good with salmon, as is fennel, as is lemon. Either baked with, or in a butter / white sauce.

Watercress cream sauce.
Double cream, salt and pepper, finely chop (or whizz in blender for a few seconds) watercress, mix into cream salt and pepper, add a tablespoon of Lemon juice. Lay fillets on buttered foil, spread cream sauce over the top, fold over foil and bake in the oven till cooked.
If you don't have watercress you can use two tablespoons spoons of horseradish sauce.

Lemon, pepper and salt. There’s actually a pre made lemon pepper seasoning which is fantastic for fish and chicken

Teaspoon each of honey, miso and soy mixed and spread on top then sprinkle with sesame seeds.

Pasta sauced with lemon, soft cheese, broccoli and peas

Spread with pesto and top with tomato slices before grilling

Brushed with sweet chilli and sprinkled with flaked almonds

An old but delicious 'recipe' of an aunt - spread with mayo, then sprinkle with dried onion soup mix and flaked almonds. Bake. Honestly fabulous with new potatoes

Sesame oil, ginger and soy marinaded for a few hours with a squeeze of lime and grilled

Spread with shop bought teriyaki sauce and spring onions

You can do either. Putting it on earlier and letting it marinate makes for a stronger flavour. I put miso/teriyaki/housing etc on the night before. I serve with udon noodles, beansprouts, edemame, scallions, red pepper, bok choi, and sometimes water chestnuts and bamboo shoots.

As people have said, salmon with honey/soy/ginger marinade then stir fry noodles/broccoli mini sweetcorn/other veg is very good
