Help! SO MANY TOMATOES

Hello everyone!

I get my fruit & veg from the local market stand on my street.
It's only a few metres from my front door and I tend to go back out when he's packing up to see what he has left.

Anyway I came home with x2 big market size boxes of tomatoes for a tenna. I slightly underestimated how many tomatoes I have.

I've already made passata, baked tomato and Parmesan risotto (it's a hello fresh recipe and it's gorgeous), I've done roasted tomato foccacia, lasagne & beef tomato mozz and basil summer salad.

I'm still left with over 85% of the tomatoes I came away with.

It's mixed with large tomatoes, vine tomatoes, cherries, beef tomatoes, and some yellow & purple tomatoes.

We're a big tomato eating family. Has anyone got any recipes or ideas? I don't think my freezer will fit them all!!

I don't think I've said tomato in the same sentence that many times in my life!

Perhaps a roasted tomato olive oil? Or chutney or some kind? Guhhh so many tomatoes.

Recipe for the cheesy tomato risotto if anyone wants it. It's one of the nicest things and easy too!

Try your hand at making ketchup, it cooks down a lot and can be gifted.

Thanks @Unabletomitigate, I've never done that before. I'll give ketchup a go. Going to be sick at the site of tomatoes by next week!

How about a tomato and chilli chutney? Or a honey tomato chutney?

I'd definitely be freezing some of them.

If you're drowning in toms and have nice neighbours, you could gift some.

Tomato and honey sounds lovely. I'll look into that. I need to find good ways of making sauces / jars as if I feed my family any more tomatoes I think they'll disown me

Once had a massive harvest of tomatoes and I chopped a load up and simmered them to make a tomato sauce and froze them in portions that could then be used as a base for pasta/curries etc.
If you put in plastic freezer bags in a thin layer they don't take up much space.

Roast some with some garlic and whole almonds, blend to make a thick pasta sauce, really delicious.

Roast with peppers and onions and herbs, leave to cool (I do them with a dinner in the oven to save energy, then have them for lunch the next day) and have with fresh, thick bread and cheeses.

I halve them, put them cut side up on a tray, drizzle with oil and seasoning then roast in a low temperature oven for 2 hours or so. They reduce in size and concentrate in flavour. Can then be frozen and take up much less room. I love adding them to sandwiches, salads, on pizzas etc. This is similar to the moonblush ones above but a bit more dehydrated i think.

You can just freeze tomatoes whole as well if you are going to use them for cooking...but that doesn't help your freezer space.

I make my own ketchup- it's a recipe from the guardian

But: you only need 1/4 or less the amount of salt, it takes much longer to cook than she says if you want a good thick sauce. I don't bother peeling the tomatoes- chop, cook till soft, blitz with a hand held blender and put it through a sieve to get out the pips and any bits. It keeps for up to a year- I bottle it in glass orange juice bottles sterilized in the oven like when you make jam.

It takes a while, but is yummy.

This stir fry with egg is my favourite thing ever to make with tomatoes. So much more delicious than it sounds.
Indian tomato chutney
Pappa al pomodoro
Kebab shop chilli sauce, I have made and frozen this before and it was fine.
But I honestly just adore a nice chunky salsa and would probably make absolutely loads of it and live off it for days 😅. Have seen people do confit tomatoes which could work and last for months.

Love the idea of gazpacho if anyone has a good recipe?

If you are on any local FB groups, you could ask to swap for other fruit /veg .People who grow their own stuff might be trying to use up something they have a glut of, or people who have veg boxes delivered sometimes have things they don't like or can't use
