Livening up porridge

Ive been having porridge on my WFH days (3). I've had it with bananas & cinnamon but looking for new ideas.

Also what amounts of milk/oats do people use.

I put 70g oats with 200g milk in the microwave for 2.5 mins

I add a pinch of different nuts and seeds - linseed, chia, sunflower, pumpkin
Walnut/almond/cashew/peanut butter

I have overnight oats - oats, a mix of nuts & seeds, frozen berries & grapes mixed up in Greek yogurt, then I add sliced banana & cinnamon in the morning.

Why? (genuine question. I've read this before, but never seen an explanation)

I make my porridge on the hob with pinhead (course) oats, adding water in a 4:1 ratio. You have to simmer and occasionally stir it for about 15 minutes, but it makes the creamiest, loveliest porridge.

Toppings; selection from lemon curd, golden syrup, banana, dried cranberries, pumpkin seeds, cinnamon.

It's the same as cooking pasta or potatoes: salting to taste somehow brings out their flavour. It's sort of tempting to think "porridge should be creamy not salty". But in fact it's both. I too was a doubter until I tried it!

I really like oats, in things like flapjacks, but just cannot stomach porridge, thought I keep trying. It's the texture, like eating wallpaper paste. However, just discovered overnight oats,
1 cups oats
1 cup milk
3/4 cup yogurt
teaspoon honey
pinch salt
left overnight in fridge, then add fruit or flavouring in the morning. The oats still retain texture, so it's like a chunky yogurt, really nice. Going to try some of the suggestions above.

I stayed in a hotel which had a bowl of sultanas next to the porridge. I added a handful as the only other fruit on offer was tinned fruit salad. Was surprised at how much I enjoyed it and is now a regular at home.

40g oats with 200ml of milk cooked in instant pot so I can go back to bed with a cup of tea. DH likes it with a teaspoon of marmalade and 1/2 teaspoon of Nutella for that chocolate orange flavour which is nice. I like banana and peanut butter or lemon curd.

Weekend meal for me. I make on hob. I chop an apple and put at bottom of bowl , I usually have 40g of porridge and put a very ripe banana in the pan too. I.play it by ear re milk. I have tried peanut butter powder as less calorific than peanut butter- not as nice though. Top it with mixed spice

DS16 loves porridge. I make it with 60g jumbo oats and 300g milk. Usually chopped banana and maple syrup or raspberries, or blueberries. Sometimes coconut milk instead of milk

Ive got a recipe from youtube

1 & half cups of porridge, blue berries, milk of choice, cottage cheese and then 3 tablespoons of chai seeds 2x tablespoon of honey or maple syrup and a teaspoon of vanilla extract and teaspoon of grated lemon rind into a blender and blend - make sure milk at bottom of blender.

pour into 3 containers and refrigerate for at least a couple of hours and pop frozen berries on top

It is delicious, I also added banana yummy, a sharp fresh taste

its certainly good if you don't like the texture of soaked oats and there is a mountain of protein in this.

If you don't have cottage cheese you can substitute greek yogurt

Salted porridge.

30% oats to water... Eg 30g oats 100g water. Soak the oats in the water for 15-20 min or longer (hours). Add a teaspoon of salt, bring slowly to a simmer stirring occasionally... It is ready when the porridge pulls away from the sides of the pan.

Serve plain or with super cold milk or salted butter.

I try to have porridge every day. I use pinhead oatmeal (although using up some rolled oats at the moment to get rid of them), Ive had WLS so my portions are very small but I use 20g of oats per portion, I cook up a batch for 5 days and use a pint of full fat milk, Im not sure what ratio that is.

But I toast the oats first, in a dry pan. You have to be careful they dont catch.

I cook it really slowly, I like it really thick, not loose.

I mix mine with dried fruit, or peanut butter, or cheese or a bit of nutella. Depends what I fancy

Also wondering about the salt, not tried this?

Or same amounts cooked and mix in some Kiefer yoghurt and berries

I sprinkled rolled oats raw into yogurt and a few nuts, seeds or some fruit. Grate an apple into it, sometimes.

The only way I can eat porridge is with two teaspoons of Sarotti (it has to be Sarotti) hot chocolate powder mixed in. Porridge is vile stuff, but when in Scotland…
