does it have to be fish? I did a nice crab cake recipe from Delia's summer book a few years ago (as a starter). Will look out the recipe if you like the sound of it.

M&S melting fishcakes.

harpsichordcarrier · 03/04/2008 19:30

yes crab fine
thanks
I have one guest who is dairy intolerant, but she can have a small amount of dairy so I thought fish/crab cakes would work

Gary rhodes did a fab one IIRC - fish balls in lemon butter sauce.

Was divine!

Will google and see if I can find it!

lilolilmanchester · 03/04/2008 19:33

I think it was this one Will check out the recipe in my book and will get back to you if much different. It's a while since I made it but enjoyed it at the time.

soapbox · 03/04/2008 19:35

Bugger - he has no recipes online because of copyright issues

I doubt very much whether I still have the book, but will have a look later!

I make a "posh" fish pie for informal dinner parties........make a basic fish pie and add more "luxurious" fish to the pie eg scallops and king prawns....I also use double cream insrtead of milk and chuck some white wine in as well..........

Let me know if you like the sound of that and I can do you an exact recipe if you like?

DM x

that sounds lovely and a fish pie would be perfect but I think doubnle cream would be too much for the lactose intolerant
yumyum to lemon butter sauce but prob same issue

how about thai fish/crab cakes with chilli sauce?

dozymare · 03/04/2008 19:52

you could instead just use a heavy wine based fish stock........

This is a Food Doctor recipe but is delicious despite being healthy.
The quantities are only for 2 but presumably can be multiplied.

200g white fish fillets, cut into chunks
4 spring onions chopped
1 tsp grated fresh ginger
1 tsp green curry paste
2 tsp Thai fish sauce
1 egg
2 tbsp chopped coriander
2 tbsp flour
zest of 1 lime
1 tbsp lime juice

Place fish, spring onion, ginger, curry paste, fish sauce, egg and herbs into food processor and blend til fairl;y smooth but still some texture.
Scrape into bowl and add flour, limezest and juice and mix gently. Divide into balls and shallow fry.

I use a bog standard mashed-spud-based recipe with dill but do it with smoked salmon fillets
