dh and I need to make some serious changes to our diet. I'm looking for nutritious but filling meals- breakfast, lunch or dinner. We have an air fryer in addition to all the normal kitchen bits but no slow cooker. Please inspire me!

Chilli with hidden veg.

PhilosophicalCheeseSandwich · 15/04/2024 19:37

Omelette with lots of vegetables (peppers, courgette, mushrooms, spinach, onion, whatever's in the fridge). It's not exciting, but it's quick, tasty and filling.

Kalevala · 15/04/2024 19:38

Eggs and smashed avo on toasted buttered sourdough with mushrooms and cherry toms.

Yestothis · 15/04/2024 19:38

Porridge, especially with addition of nuts / seeds / fruit

Rice with egg and lots of veg

Fried fish coated in oatmeal or marinaded, home-made potato wedges (frozen ones are half hollow), veg baked in air-fryer

Anything involving lentils

What do you like eating usually?

Neurodiversitydoctor · 15/04/2024 19:40

Soup made with roasted root veg, lentils and stock.

RabbitsRock · 15/04/2024 19:41

I made a lovely stew from Asda magazine the other day ( look online) - sausages, sweet potato, green lentils & parsley. DH makes a hearty sausage pasta with tinned tomatoes, onion, garlic, chilli powder etc.

wwyd2021medicine · 15/04/2024 19:42

Lazy meal tonight - sea bass, merchant gourmet lentils in tomato stuff, leeks, broccoli, dh may have potatoes too
Should take all of 10 minutes 😂

orangedrizzle · 15/04/2024 19:42

@Yestothis I suppose our biggest problem is snacking really. We eat reasonably healthy on the whole but ( particularly over the holidays) have eaten far too many snacks. I've been pregnant/breastfeeding for the past 5 years so it's really hard to get out of the mentality of ' another biscuit is fine'. I really need to lose some weight but it's so hard with chronic sleep deprivation and 3 small children!

Thanks for these great ideas so far!

On Saturday I made an Indian style meal of- sag aloo, coconut dahl and tikka cod. Was v tasty and filling and healthy.

Icantremembermyusername · 15/04/2024 19:44

lol, I’ve just posted on another thread - TikTok roasted tomato and feta pasta!

greengreyblue · 15/04/2024 19:45

Jacket potatoes filled with chilli( meat or veggie), tuna and low fat mayo or just baked beans, cottage cheese and salad.

Ovaltiner · 15/04/2024 19:46

Also on the merchant gourmet theme, the same tomatoey lentils with feta, rocket, roasted tomatoes and walnuts, all tossed together with some ex virgin olive oil and balsamic vinegar.

Or roasted butternut squash with rocket, lardons and walnuts (and possibly some Stilton, although that's a little less healthy...).

This is what you want. Buy in bulk to save money. Cut out / down on meat, fill up with produce and recipes from here. I don’t work for them - but this is probably half of my regular diet when at home:

As mentioned, there are recipes below pretty much every item.

A nice meal that can be breakfast, lunch or dinner with some added carbs is shakshuka . Make a lovely spicy tomato ragu and add peppers then crack some eggs in, add a lid to steam the egg. Dip in toasted bread.Yum.

LittleSparklyStar · 15/04/2024 19:47

I like anything with butternut squash, nuts, lentils, chickpeas.
I find I eat better if I eat egg for breakfast - so an omelette or with avo on toast

greengreyblue · 15/04/2024 19:52

Do you like curry OP? A chickpea and spinach curry is so cheap and very nutritious. Serve with brown rice or chapati and a blob of yoghurt.

That sounds delicious. Could you post a link do you think?

coffeewithmilk · 15/04/2024 19:58

Thick Greek yoghurt mixed with a scoop of protein powder (flavour of your choice - I like vanilla) and then add some blueberries, bit of granola or seeds and a drizzle of honey or some chocolate chips.. whatever you fancy really

It's filling because of the protein in it.. the whole thing has around 20-25g of protein depending what you put in it.. that's what will keep you fuller for longer.. and also very little fat (depending again what toppings you put on)

margoration · 15/04/2024 19:58

I made homemade museli the other day with just organic oats, various chopped nuts, seeds and raisins. It was crazily filling and kept me going the whole day. Took two mins to make as well - just mix all the ingredients together. You can add other stuff if you want. And it tasted so much better than shop bought (which is generally a UPF!).

I've just been reading the UPF book by Chris van Tulleken which has reminded me how any UPF ingredients activate your hunger and prevent you being able to stop snacking or overeating. Which is most supermarket food. Following a few days of avoiding UPF I am amazed at how my bad habits have already changed and my appetite is much much lower. Do give it a go. Everything from most supermarket bread, to flavoured yoghurts, ice cream etc etc are UPF - you'd be surprised.

We've just had smoked tofu (Aldi do it now!) fajitas with peppers, carrots, onions. A load of little gem, homemade guacamole, coriander, soured cream and grated cheese.

Absolutely gorgeous, feels like a treat meal, no time to cook and full of plants and goodness.

dotdotdotdash · 15/04/2024 20:08

I agree with this @margoration. It does feel so much easier to moderate when I'm eating 'real' food!

My quick healthy recipe suggestion is roast vegetables; anything seasonal, but cauliflower and peppers are especially good. Some sort of dressing like tsatsiki or tahini-based is good. You can also roast chicken thighs in with it. 45mins and you'redone. Use your imagination and throw in other things like olives, herbs, seasoning, preserved lemons.
