I love a post with a photo!
I have a lovely cauliflower, a roamanesco, a celeriac and a kohlrab.

I usually steam or roast cauliflower, steam romanesco, boil and mash celeriac. I make an excellent cheese sauce.
I have never tried kohlrabi but I plan to serve it in salad ( grated?)

But I am in a rut! I have a day off tomorrow so could spend some time.
Maybe roast the cauliflower whole?

We are a vegetarian house and fairly well stocked for ingredients.
What should I make?

I'm always interested in those recipes that make cauliflower cheese but keep the cauliflower whole - have you ever tried that?

Yum! I started a celeriac post a few weeks ago which I'll link if I can. Celeriac query | Mumsnet

  • I actually bought a romanesco today and plan to make it like a cauliflower cheese or do half and half with a cauli
  • Cut the cauli (and or romanesco) into florests and bake until just browing on the edges. Serve with a tahini and lemon sauce then sprinkle with toasted sesame seeds. Makes a lovely, nutty side dish and baking the veg removes some of the water, so not as soggy as steaming it
  • I cooked a whole celeriac in a salt batter coating, but wish I'd added more flavours inside it.
  • Grated celeriac makes a great replacement for green papaya in som tam. You could swap soy sauce for the fish sauce, and obviously leave out the dried prawn. https://www.seriouseats.com/som-tam-green-papaya-salad-5208332
  • Kohl rabi, I cut off the top and bottom then peel or cut off the rest of the tougher skin. I grate it into coleslaw and cut into chip shapes and bake in the oven with garlic and onion powder.

Celeriac - great chips or gratin as a side or also dab creamy soup.

Kohlrabi - excellent raw in salads, but you can also scoop out middle and stuff then bake. Also good as a side boiled either parsley/cheese sauce.

Cauli - steaks are good or the buffalo wings fake - in a spiced batter.

There was a Cornish chef on tv last night and he roasted whole celeriac on a bbq then chopped them up and coated them in spices before crisping them up a bit. Looked delicious.

Celeriac made into oven chips

Cauliflower chopped up, spiced and roasted

Romanesco I’m going to suggest same as cauli but never tried. Or soup.

Chop the romanescu and cauliflower. Toss in seasoned oil, spread on baking tray. Hot oven until nicely catching at the edges. Food of the gods. Variation: add lemon zest and juice. Or chilli and lime. Or crushed garlic and Parmesan.

Celeriac: peel, chop, steam until tender. Blitz in food processor with seasoning, cream and butter.
Or make oven chips with it.

If you like blue cheese, cut cauliflower into florets and blanch for a couple of minutes until still firm but not solid. Steam dry, dust in flour, dip in egg and then coat in a mix of wholemeal breadcrumbs and finely crumbled blue cheese. Place on a non stick baking sheet, spray with oil and bake until crisp.

Kohlrabi: peel, chop. Braise on the hob in butter with a splash of water until tender. Season and enjoy

Take advantage of the beautiful shape and colour of the Romanesco by using it in a pasta Primavera, you just need to add another couple of green vegetables such as peas and green beans.

Cauliflower cheese with vegetarian sausages? Or maybe a whole roast cauliflower with a marinade of yoghurt and Indian spices, serve with a black bean Dahl for a good colour contrast.

Celeriac remoulade is fab, you could add some of the kohlrabi to that too. Or celeriac makes a great low carb mash too.

Riverford do a lovely cauliflower and potato dal.

Celeriac chips.

I would fo a type of alad or slaw with the kohlrabi. Maybe replace some of the carrot and cabbage in a regular coleslaw.

Soup with 2 parts cauli, 1 part celeriac and 1 part parsnip, with onion and stock, cook until soft and blend really well. You need a good blender but it's amazing, so much more than the sum of its parts. It's an Ina Garten recipe
