Help please! Guests coming for lunch on Sunday. Young adult guests with healthy appetites. Builders in. No time to think!

Need to prepare at least two puddings or cakes.

My husband has suggested treacle tart.

But I was thinking chocolate or lemon or both (separately).

Has to be able to be prepared at least partly in advance.

What are you having?

Thank you.

Eton mess is a good one.

No way am I baking tarts, you can buy quite nice ones from a shop.

Throwyourkeysup · 25/03/2024 16:34

Yes tarts are a lot of work!

Thank you; I hadn’t thought of Eaton mess for Easter; I suppose I associate it more with summer because of the soft fruit. But maybe I could do a rhubarb version?

But, thinking about it, I have had a few disasters the last time I made meringues!

Rhubarb or apple crumble and chocolate brownies, fruit and chocolate both covered, ice cream with both, both relatively quick and easy

Justonedayatatime11 · 25/03/2024 16:42

I'm making lemon posset with GF shortbread and either triple chocolate brownies, or apple crumble

mumonthehill · 25/03/2024 16:42

The nigella recipe above is fab. Or chocolate brownie as you can make in advance and freeze and serve with mini eggs and ice cream.

I recommend Nigella’s lemon meringue cake for a good Easter pud.

Thank you that looks very seasonal somehow karmakameleon Will have to improve my meringue making skills though! 😀

Fruit and chocolate always a good combo thanks marylou25. If I buy good quality choc, if I get really short of time, at a pinch I could just pile it all on a serving platter

Try these. You really can't go wrong

Tiramisu, perfect pick me up after a large lunch!

Throwyourkeysup · 25/03/2024 16:47

I’ve never heard of chocolate trifle! It’s got me thinking thank you!

I’m not a great custard eater myself but others would like it.

Is tiramisu ok for Easter do you think? Or a bit too rich after lamb?

To be honest if everything is topsy turvy with builders I would be definitely be buying a decent lemon tart or something. Rhubarb version of Eton mess sounds good, but cut yourself some slack and just crush up some shop bought meringue nests! No-one will know!

Nix32 · 25/03/2024 16:53

This is fabulous - really simple, delicious and looks amazing

Thanks I quite like the idea of a big Easter nest cake of some description! Not sure I have patience time for individual ones but this has given me ideas thank you.

Yes this is good advice as I tend to over complicate thanks.

There are reasons I want to make an effort though; one of my adult daughters bringing bf home for first time and another hasn’t been home for a while and is bringing a friend and also have extended family coming.

May buy some meringues in case I really do run out of time thanks!

Nigellas flourless chocolate orange cake is dead easy and tastes incredible. Can be made a day ahead. It’s very rich, so it goes a long way.

https://thehappyfoodie.co.uk/recipes/nigella-lawsons-chocolate-orange-cake/

This is also amazing, and can be kept in the tin in the fridge overnight before turning out and adding the berries and sauce when ready to serve. It’s always impressed guests.

I’ll be honest though, we had an impromptu dinner party recently, and I totally cheated with dessert and bought a couple from the Cook frozen range. Their desserts are generally amazing. We had the lemon tart and a chocolate one this time, and both were delicious, but my favourite is their fruit vacherin, totally fantastic.

Easter Egg Nest Cake

This has been my Easter stalwart for the past few years and I don't see that changing — ever. Make this just once, and you will be similarly convinced. Even if I wanted to stop making this, I wouldn't be allowed to. This recipe is also this month’s Co...

Some interesting ideas, thank you! I am very fond of a hot x bun, intrigued to see how that becomes a pudding and never knew that was called Yorkshire mess until now! 😀
