Help please! Guests coming for lunch on Sunday. Young adult guests with healthy appetites. Builders in. No time to think!

Need to prepare at least two puddings or cakes.

My husband has suggested treacle tart.

But I was thinking chocolate or lemon or both (separately).

Has to be able to be prepared at least partly in advance.

What are you having?

Thank you.

Well I would absolutely buy it in if you have builders

But lemony or fruity - majoring on chocolate is too much because you already have Easter Eggs

Lemon posset (with shortbread if they are big appetites)

Lemon tart (cook do excellent ones - that’s what I’d do)

Lemon meringue pie

Lemon cheesecake, with berry compote of

Or buy nice meringues and sandwich together with whipped cream and lemon curd

Rhubarb fool with shortbread

old fashioned rhubarb crumble with ice cream

tarte tatine

If you want a cake too for tea Then I’d either go trad with simnel cake (Mary berry’s is light n lovely) or welcome in spring with a Victoria sponge with tart fruit filling and whipped cream on the side

Hot cross bun bread and butter pudding

Gonnagetgoingreturnsagain · 26/03/2024 11:41

A trifle is so easy to do.

mindutopia · 26/03/2024 13:53

I love a classic hot cross bun bread and butter pudding with custard. I couldn't give you a recipe as not sure which one I may have used in the past, but it's simple enough that none of them can go wrong.

GingerIsBest · 26/03/2024 15:19

I am planning to make a no-bake lemon cheesecake, decorated in an Easter fashion with mini eggs (and probably at least one mini Lindt bunny). Because I also do not have the time, energy or inclination for anything more complex than that at this time in my life.

Of course, I remembered to buy the cheese and the cream, but not the mini eggs so you know, it might just be a lemon cheesecake.

I really fancy making this. Using shop bought stuff (just roast the rhubarb)

Rhubarb and custard sundae.

Ice cream sundaes-can make or buy the various components, mine always go down well with adults and kids & has been requested again this Easter-am feeding 10:
Ice cream
Meringues
Brownies
Mini marshmallows
Various toppings-sprinkles, mini eggs, crushed maltesers
Mars bar chocolate sauce
Caramel sauce etc
Strawberries/raspberries/bananas

I generally make the sauces & meringues.

Also Nigellas choc bread & butter pudding-super easy, make the day before

My husband once made a desert with hot cross buns. The hot cross buns cut in half with jam or chocolate spread in the middle. He then put them in a tin, covered them in custard, and put them in the oven until hot.

Bread and butter pudding made with hot cross buns, chunky marmalade and a handful of dark chocolate chips.

Luckydog7 · 26/03/2024 15:54

Pudding are always my job for family events. There are 14 plus people this Easter 4 kids 10 adults, lots of hulking blokes too so I was planning 4 desserts for two days if eating.

I've already done a chocolate torte for the freezer for emergencies. Someone else is doing a trifle. I'm doing a massive cheesecake with caramel and a hobknob base then on the day will whip up my quick peach tart tatin. Only needs puff pastry, tinned peaches and sugar and 10 minutes to whip up. I was thinking of a lime curd and raspberry pavlova too but it depends on how much dessert is left on Saturday.

Hot Cross Bun bread and butter pudding. Easy and seasonal!

Blueberrycreampie · 26/03/2024 16:02

Asda's Apple strudel is surprisingly nice - appley and not too sweet. It's from the frozen food section.

Throwyourkeysup · 26/03/2024 18:42

Wow! Just returned from work to see all of these suggestions! Thank you so much everyone. I really appreciate every single one!

I like the idea of Delia’s chocolate torte but whether I can get liquid glucose where I am in remote countryside I’m not entirely sure! I will have a look in the local supermarkets.

Thank you very much indeed for all of the hot x bun bread and butter pudding recipes too! I am not going to prepare them for after lunch but will make some for the youngsters to eat at other times!

I know they will go down well.

Really fancy some rhubarb - might make a fool - and some biscuits to accompany it.

Absolutely love apple strudel too but I think it’s not as seasonal maybe?

Again, I really appreciate these ideas, thank you.

I think Gary Rhodes or Jamie Oliver does a baileys bread and butter pudding which is delicious. My DM used to make lemon cheesecake (with digestive biscuit base) which is on the easier side.

Nigella has a recipe for an Easter Nest Cake. It's very chocolatey and I highly recommend.
https://www.nigella.com/recipes/easter-egg-nest-cake

This cake is very good and very easy.

I'm making lemon possett tart but you could either buy the tart case or just make the possett in glasses. Needs to be made the day before to set.

Thingsthatgo · 26/03/2024 19:39

Half a chocolate egg as a bowl. Crushed digestive biscuits, scoop of good vanilla ice cream, salted caramel liqueur drizzled on top. Maybe some chopped hazelnuts or pistachios.
